The story of Tolecarnes has been linked to cattle farming since 1960. Three generations have been dedicated to raising cattle in the Montes de Toledo, an experience passed from one generation to the next that continues to shape the way they understand livestock farming.
Their farm is located on a dehesa on the northern side of the Montes de Toledo, an environment particularly well suited to the natural growth of pasture. For much of the year, the animals graze freely and make direct use of the resources provided by the land, maintaining a way of farming that is closely connected to the territory.
Their diet is adapted to the conditions of each season. During the months of greatest abundance, some of the pasture is harvested and stored for winter and, when the animals' diet needs to be supplemented, they use 100% natural feed made exclusively from plant-based ingredients. This feed is produced at the Menasalbas cooperative of which they are members, a connection that allows them to follow its production closely and maintain greater control over the feeding of their cattle.
Over the years, they have combined this traditional approach to farming with livestock selection that takes genetics into account, as well as everything surrounding the animal throughout its life. The environment, diet and activity all form part of the same process aimed at producing balanced, high-quality meat.
The experience accumulated over three generations has allowed them to seek greater consistency in their meat, paying particular attention to characteristics such as tenderness, juiciness and marbling, without losing sight of the flavour that is distinctive to each cut.
Today, Tolecarnes continues its livestock farming activity in the Montes de Toledo, maintaining an approach in which the dehesa, the animals' diet and knowledge passed down through generations remain the foundation of its meat.
