The pale foam that appears on a pot of chickpeas, lentils or beans often raises the same question: does it need to be removed because something is wrong, or can it simply be left alone? In most cases, the foam is a normal result of cooking. It is not ordinary dirt and it does not by itself mean that the pulses are spoiled.
As dried pulses hydrate and heat up, they release small amounts of soluble proteins, starch, minerals, compounds from the skin and tiny particles from the seed. Boiling introduces air, and some of those compounds stabilise bubbles, creating a foamy layer.
What the foam contains
There is no single substance responsible. The surface can contain proteins, naturally occurring saponins, fragments of starch and very fine material released from the skin. The exact mixture depends on species, variety, age, soaking and cooking intensity.
This is why one batch of chickpeas can foam heavily while another produces very little. Water volume and pan shape also matter: a narrow pot concentrates the foam and makes it look more dramatic.
Do you have to skim it?
No. In normal cooking, skimming is mainly a culinary choice rather than a safety requirement. If you want a particularly clear broth, a cleaner-looking surface or less risk of the pot foaming over, remove the top layer with a spoon or skimmer.
If you leave it, much of the foam eventually collapses or becomes incorporated into the cooking liquid. In dishes that will be blended, reduced or served as a thick stew, there is usually little benefit in removing every bubble.
When skimming is useful
- When the pot is very full and foam may overflow.
- When you want a visually clear broth.
- When many loose skins or particles collect on the surface.
- When vigorous boiling makes the surface difficult to control.
Remove only what is convenient. There is no need to chase every patch of foam or repeatedly replace the water, because doing so can also remove flavour and solids that give the broth body.
Hard boiling makes foam more obvious
A violent boil creates more bubbles and movement. It lifts particles, can damage delicate skins and makes foam more visible. For many pulses, once the appropriate temperature has been reached, a steadier simmer gives better control.

Does soaking reduce foam?
Sometimes. Soaking draws some soluble compounds and surface material into the water. If that water is discarded and the pulses are rinsed before cooking, the initial foam can be reduced. It is not guaranteed, because some varieties still foam noticeably.
Soaking requirements also differ. Chickpeas and many beans generally benefit from soaking, while many lentils can be cooked without it. Choose the method for the pulse, not simply to eliminate foam.
Should you change the cooking water?
Not merely because foam has appeared. Replacing water halfway through cooking changes temperature, flavour concentration and the texture of the broth. A traditional recipe may call for it, but it is not a general safety rule.
The cooking liquid contains starches and compounds from the food itself. In soups and stews, those substances are part of the final texture.
Foam is not the same as digestibility
A common claim is that skimming removes everything responsible for gas. That is an oversimplification. Digestibility depends on several fermentable carbohydrates, portion size, soaking, cooking and individual tolerance. Removing surface foam does not transform the pulse into a chemically different food.
Thorough cooking, appropriate portions and gradual intake for people who are not used to eating pulses usually matter more than obsessive skimming.
What if the foam is unusually dark or smells strange?
Normal foam is usually white, beige or lightly coloured by the broth. If the pulses or liquid have a clearly abnormal odour, unexpected fermentation, mould before cooking or other signs of deterioration, then the issue is not the foam. Assess the condition of the whole food.
Dried pulses should be kept dry and protected during storage. A normal appearance and clean smell before cooking are more useful indicators than the amount of foam produced later.
Should dried pulses be rinsed?
It is sensible to inspect and rinse them to remove dust, loose particles or debris from storage. Rinsing is physical cleaning rather than sterilisation.

A practical rule
If the foam is pale, appears during an otherwise normal cook and the pulses were sound beforehand, skim it or leave it according to the result you want. Skimming is a finishing technique, not a compulsory safety step.
Frequently asked questions
Does foam mean the pulses were dirty?
Not necessarily. It can appear even after careful rinsing because much of it comes from compounds released by the seeds.
Is the broth unsafe if I did not skim?
With sound pulses and normal cooking, there is no general reason to discard it for that reason.
