Green or sprouted potatoes: when can you eat them and when should you discard them?

A potato forgotten in the pantry may develop sprouts, prominent eyes or green patches. Sometimes a small area can be removed; in other cases the sensible choice is to discard the potato. The difficulty is that “green” and “sprouted” are often treated as the same problem even though they are not identical.

Potatoes naturally contain glycoalkaloids, mainly alpha-solanine and alpha-chaconine. These are plant defence compounds. Levels can be higher in sprouts, eyes, peel and green or damaged areas. That is why the overall condition of the potato matters more than a simplistic rule such as “one sprout means throw it away”.

Quick answer

A firm potato with no bitter taste, one or two small sprouts and no extensive greening can often be used after generously removing sprouts, eyes and any green tissue and peeling where appropriate. A potato that is strongly green, heavily sprouted, shrivelled, damaged or bitter is better discarded.

Why does a potato turn green?

The green colour is chlorophyll produced after exposure to light. Chlorophyll itself is not the main concern. The important point is that the conditions that cause greening can also be associated with higher glycoalkaloid concentrations.

Greening is therefore a visual warning sign. It cannot tell you the exact solanine level, but it tells you to assess the potato more carefully.

What are solanine and chaconine?

They are naturally occurring glycoalkaloids found in the nightshade family. In potatoes they are concentrated particularly near the skin, eyes and sprouts. At sufficiently high exposure they can cause gastrointestinal symptoms including nausea, vomiting, abdominal pain and diarrhoea.

The European Food Safety Authority has assessed this risk. Peeling and some cooking methods can reduce glycoalkaloid content, but cooking is not a reliable rescue strategy for a strongly green or heavily sprouted potato.

One small sprout: what should you do?

If the potato remains firm and otherwise looks normal, remove the sprout together with a generous amount of tissue around the eye. Remove any small green area widely as well.

Then assess the rest of the potato. If it is firm, smells normal and is not bitter, it can usually be used. Do not merely snap off the visible tip: the eye itself should also be cut away.

Many long sprouts: discard

When a potato has many long sprouts and has become shrivelled or soft, it has already used some of its reserves to grow. Culinary quality is poor and sprouts contain high glycoalkaloid concentrations.

At this stage there is little value in carving away half the tuber. Discard it and improve storage conditions for the remaining potatoes.

Slightly green versus extensively green

A small superficial green patch can be removed generously. If greening covers a large proportion of the potato, extends beneath the peel or appears together with heavy sprouting and bitterness, discard the potato.

A home kitchen has no visual method for measuring exact glycoalkaloid concentration, so a precautionary approach makes sense when warning signs are extensive.

Bitter taste matters

A potato with a clearly bitter taste or burning sensation in the mouth should not be eaten. Do not try to hide it with salt, sauce or frying. Bitterness can be associated with high glycoalkaloid levels.

Does peeling remove solanine?

Peeling can substantially reduce glycoalkaloid content because much of it is concentrated in and close to the skin. EFSA has reported meaningful reductions from peeling. However, peeling is not a guarantee for a potato that is heavily green, damaged or strongly sprouted.

Fresh, intact potatoes can be eaten with the skin when properly cleaned. Once greening or sprouting is present, peeling and generous trimming are risk-reduction measures, not permission to rescue every potato.

Does boiling or frying destroy glycoalkaloids?

Cooking methods can reduce some glycoalkaloid content, especially when combined with peeling, but the compounds are relatively resistant. Do not rely on heat as the only control measure.

Make the decision before cooking: a strongly green, bitter or heavily sprouted potato is not worth trying to save by cooking it harder.

What about the cooking water?

Some glycoalkaloids can move into boiling water. If potatoes required removal of eyes or small suspect areas, it is prudent not to reuse that water for soups or sauces.

Are all sprouted potatoes poisonous?

No. A single tiny sprout does not mean the whole tuber has become automatically dangerous. Risk depends on the overall picture: number and size of sprouts, extent of greening, damage, bitterness and amount consumed.

A useful rule is proportional: small localised defect, remove generously; extensive warning signs, discard.

Extra caution for young children

For small children, choose fresh, firm potatoes without greening, peel where appropriate and avoid old or heavily sprouted tubers. Because children have lower body weight, the same amount of glycoalkaloids represents a larger dose per kilogram.

How to stop potatoes turning green

Prevention is simple: darkness, a cool environment, dryness and ventilation. Light encourages greening and excessive warmth accelerates sprouting.

  • Keep potatoes away from direct light.
  • Avoid sealed plastic bags that trap moisture.
  • Check the batch and remove damaged potatoes.
  • Buy quantities you will realistically use.
  • Do not leave them for days in a brightly lit kitchen basket.

Very cold refrigerator storage can also alter potato sugars and affect how they behave during high-temperature frying, so storage should consider the intended use as well.

What is the difference between a potato eye and a sprout?

Potato eyes are natural buds from which new shoots can grow. A fresh potato can have visible eyes without having developed long sprouts. Once growth begins, the tuber is using its stored reserves, and glycoalkaloid concentrations are particularly relevant in the sprout and nearby tissue. When a potato is still firm and sprouting is only slight, do more than snap off the visible shoot: cut away the eye and a generous amount of surrounding tissue as well.

This distinction also prevents needless waste. Eyes themselves are normal anatomy; every potato has them. What matters is strong sprout development and whether it comes with extensive greening, shrivelling, damage or bitterness.

Ugly is not the same as unsafe

An irregular potato, a little soil or a superficial scar can be perfectly usable. Cosmetic appearance is not the same as a warning sign associated with glycoalkaloids or spoilage.

Understanding the distinction prevents unnecessary waste: do not throw away a potato merely because it is imperfect, but do not force yourself to use a strongly green or bitter one just to avoid waste.

Bottom line

There is no universal yes-or-no rule for every green or sprouted potato. A small sprout or local green area can often be removed generously when the potato is firm and otherwise normal; a strongly green, heavily sprouted, old, damaged or bitter potato should be discarded.

The best strategy is prevention. Store potatoes in a dark, cool, dry and ventilated place, buy sensible quantities and check them periodically. Good storage protects both quality and peace of mind.
