How to build a Spanish aperitivo with Iberian cured meats, preserves and EVOO without overloading the table
A good Spanish aperitivo does not depend on covering the table with twenty dishes. When everything is rich, salty, cured or heavily seasoned, adding more can actually make the experience less interesting. The goal is to create a sequence: something fatty and delicate, a more intense cured product, a vegetable element, a preserve, neutral bread and an olive oil that connects the meal without masking it.
Ham or shoulder, Iberian cured meats, vegetable preserves and good EVOO are enough to build a complete table. The aim here is to organise them so each product has space and the quantities remain sensible.
First decide whether this is an aperitivo or the meal itself
Quantity changes completely depending on what comes next. Before a main course, portions should be small. If the aperitivo is replacing an informal dinner, increase variety and add bread, vegetables, preserves and more filling preparations.
This prevents a common mistake: calculating every item as if it were the main product. If ham, loin, chorizo, salchichón and several preserves are all being served, you do not need the same quantity of each as you would if it appeared alone.
Use ham or shoulder as an anchor, not the only flavour
Ham and shoulder are a natural starting point because they combine fat, salt, aroma and temperature-sensitive texture. Serve thin slices rather than a compact pile. If the product is too cold, the fat remains firm and aromas are muted.

Do not serve three cured meats that play exactly the same role
Loin, chorizo and salchichón are not interchangeable. Cured loin keeps the meat itself at the centre; chorizo brings paprika and a strong aromatic identity; salchichón has a different spice profile. Together they create contrast, provided the portions are small.
If ham is already the main attraction, one or two additional cured meats may be enough. A board overloaded with charcuterie can fatigue the palate and reduce the differences between products.
Vegetable preserves provide a missing contrast
A well-chosen vegetable preserve can add acidity, natural sweetness, tender texture or roasted notes that interrupt the continuous rhythm of fat and salt. Peppers, leeks, young garlic and other vegetables can be served alone, gently warmed or placed on simple toast.
They do not need to be covered in sauce. If the raw material is good, draining where appropriate, adjusting seasoning and adding a few drops of EVOO may be enough.
EVOO does not need to cover everything
Olive oil works best as a deliberate seasoning, not as decoration poured over every plate. A robust EVOO can lift tomato, bread or certain vegetables; a gentler one may suit delicate foods. Using the same oil heavily on ham, cured meats, preserves and bread can make distinct products taste more similar.

Bread is support, not filler
Bread partly resets the palate and supports oil, preserves and cured meats. It should not be so sweet or heavily flavoured that it competes with them. A loaf with good crust and structured crumb is usually versatile.
Do not assemble wet toasts too early. Liquid from vegetables or oil will eventually soften the bread, so finish them close to serving.
How to order the tasting
There is no mandatory sequence, but it is sensible to move from cleaner flavours towards more assertive ones. One example is EVOO with bread, then ham or shoulder, loin, salchichón, chorizo and finally stronger preserves. A very delicate preserve can be served earlier.
The aim is to stop paprika, garlic or a powerful sauce dominating everything that follows. Bread and water between items help refresh the palate.
An example for four people
As a pre-meal aperitivo, a balanced selection might include one small plate of ham or shoulder, one or two cured sausages in modest quantities, one vegetable preserve, sliced bread and EVOO for bread or vegetables. If the aperitivo is dinner, add more vegetables, a pulse salad, a warm dish or another preserve.
Exact amounts depend on appetite, duration and whether a main course follows. Plan the whole table before deciding how much of each item to buy.
Temperature and timing
Not every product should be served at the same temperature. Iberian cured meats benefit when their fat is not rigid. Preserves may work at room temperature or warm depending on the product. EVOO should remain protected from heat and light until use.
Preparing early does not mean leaving everything open for hours. Set the table and bread first, then bring sensitive products out closer to serving.
Three mistakes that make an aperitivo feel less considered
The first is too much food. The second is too much seasoning: sauces, spices and oil can hide products that need very little help. The third is serving everything too cold. Thick slicing is another common problem because it changes texture and makes portions feel heavy.
A refined aperitivo is not defined by the number of dishes, but by the intention behind the selection and service.
