“This oil has very low acidity” is a common phrase in olive oil, but it is also widely misunderstood. Many consumers imagine acidity as a sour sensation similar to lemon or vinegar. Olive oil does not work that way: free acidity is a chemical measurement obtained by analysis, not something that can be accurately measured with the palate.
Understanding the distinction makes labels and technical sheets easier to read and prevents an oversimplified conclusion: that the oil with the lowest number must automatically taste better. Extra virgin quality is assessed through several chemical and sensory criteria. Acidity matters, but it does not tell the whole story.
What free acidity actually measures
Oils consist mainly of triglycerides, molecules in which fatty acids are attached to glycerol. When some fatty acids become free, the level known as free acidity increases. In olive oil it is conventionally expressed as grams of oleic acid per 100 grams of oil.
So an acidity figure of 0.3% does not mean the oil contains “0.3% sour flavour”. It means laboratory analysis has quantified free fatty acids and expressed the result as oleic acid.
The EVOO limit: 0.8 g per 100 g
European rules and the International Olive Council standard set a maximum free acidity of 0.8 grams per 100 grams, expressed as oleic acid, for extra virgin olive oil. Virgin olive oil has a higher limit. Meeting the acidity threshold alone, however, does not make an oil extra virgin.
The category also requires compliance with other physicochemical parameters and sensory criteria. The International Olive Council classifies virgin olive oils through a combination of chemical and organoleptic characteristics rather than one isolated number.
Is 0.2 always better than 0.5?
Not necessarily. Both values sit comfortably below the maximum for extra virgin olive oil, but many other factors then matter: fruit condition, speed of milling, variety, ripeness, storage, aroma, bitterness, pungency, absence of sensory defects and overall balance.
A very low figure can provide useful information about raw material and processing, but it does not tell you whether an oil will be green-fruity, ripe, intense, delicate, bitter or peppery. It also does not tell you which food it will suit best.
Why acidity increases
Free fatty acids are produced through hydrolysis of triglycerides. Damaged or overripe olives, or fruit held in poor conditions before milling, can encourage deterioration. Time between harvesting and extraction and careful handling at the mill therefore matter.
This is why free acidity is used as one chemical quality indicator. It still needs context. An oil can meet the acidity limit yet have a sensory defect that prevents extra virgin classification.
Chemical acidity and sour taste are different things
When tasting EVOO, we discuss fruitiness, bitterness and pungency, together with any defects. The peppery feeling in the throat is not acidity. Bitterness is not acidity either. These can be positive attributes and depend on variety, harvest stage and composition.

Can we determine acidity by tasting?
No, not accurately. Free acidity is measured in a laboratory. A trained taster can identify sensory attributes and defects but should not claim that an oil has 0.2 or 0.6 acidity simply from tasting it.
Professional sensory assessment complements chemical analysis; it does not replace it. Extra virgin classification depends on the relevant criteria in both areas.
Why some bottles display acidity and others do not
Acidity can be provided as additional technical information, but consumers should not make it the only buying criterion. Legal product designation, origin where relevant, best-before information, package, storage guidance, variety and harvest information can provide more useful context.

Storage still matters
Once produced, olive oil continues to evolve. Light, oxygen and heat accelerate oxidation and loss of freshness. Oxidation and free acidity are not the same phenomenon, but both belong to the wider set of factors used to understand oil quality and ageing.
Buying good EVOO and then leaving it beside a hot hob or in direct sunlight makes little sense. Quality is built in the grove and mill, but it also needs protection during storage and use.
How a buyer should use the acidity figure
Treat it as one piece of evidence. First confirm that you are looking at correctly labelled extra virgin olive oil. Then consider variety, package size, date, producer, intended use and sensory style. If an acidity value is also supplied, add it to that picture rather than turning it into an absolute ranking.
Two EVOOs can have different acidity values and both be excellent. Which one you prefer will depend largely on the style you want and how you plan to use it.
A simple rule to remember
When you read “acidity” on an olive oil sheet, think chemical analysis, not sour flavour. When you taste bitterness or pungency, think sensory attributes. And when deciding whether an oil is extra virgin, remember that the category is based on several criteria at once.
