The ostrich sirloin cut from approximately 700 to 800 g allows to prepare several rations from one piece. Although it is poultry meat, its color is red and its culinary use can be closer to that of certain cuts of cattle. It is appropriate to divide it evenly and adapt the times to the chosen portions.
The piece between 700 and 800 g allows to obtain medallions of the same thickness for several dishes. It should not be confused with seasoned ostrich burgers or fingerers, since it is a cut with a different preparation.
