Additives in canned vegetables: what acidifiers, antioxidants and preservatives actually do

Reading a label and finding “citric acid”, “antioxidant: ascorbic acid” or an E-number can make it seem as though all these ingredients do the same thing.

They do not.

Food additives perform specific technological functions. Some control acidity, some reduce oxidation, some inhibit microbial spoilage and others help maintain texture or colour.

It is also useful to correct a common misunderstanding: “additive” does not automatically mean “preservative”. European food law recognises many different functional classes, and an additive may be used without its purpose being microbial preservation.

What is a food additive?

In the European Union, a food additive is a substance that is not normally consumed as a food by itself or used as a characteristic ingredient, but is intentionally added for a technological purpose during manufacture, processing, preparation, packaging, transport or storage.

EU law recognises functional classes including preservatives, antioxidants, acids, acidity regulators, stabilisers, thickeners and firming agents.

The useful question is therefore not simply “does it contain additives?” but which substance is used, what does it do and why is it present in this type of food?

Acid and acidity regulator are not exactly the same thing

An acid increases the acidity of a food and may also give it a sour taste.

An acidity regulator changes or controls acidity or alkalinity.

In a vegetable preserve, acidity may be part of both flavour and product design. Some products are intentionally acidified because that is the expected taste; in others, pH control also helps create conditions that inhibit particular microorganisms.

Citric acid is a familiar example. Its presence does not mean a processor is trying to hide spoiled or poor-quality raw material. It may simply be part of the normal formulation.

What does an antioxidant do?

Oxidation changes food even when microorganisms are not growing.

It can alter colour, aroma and fats. European law defines antioxidants as substances that extend shelf life by protecting food against deterioration caused by oxidation, including rancidity and colour changes.

Ascorbic acid—vitamin C—can be used technologically as an antioxidant.

This also demonstrates why an E-number does not mean “synthetic” or “bad”. Many substances that occur naturally in foods also have E-numbers when they are authorised and used as additives.

What does a preservative do?

“Preservative” has a more specific functional meaning.

Under Regulation (EC) No 1333/2008, preservatives are substances that extend shelf life by protecting food against deterioration caused by microorganisms and/or protecting against the growth of pathogenic microorganisms.

That is different from an antioxidant. An antioxidant controls oxidation reactions; a preservative addresses microbiological deterioration within its authorised use conditions.

Some sterilised canned foods can achieve shelf stability through heat treatment and hermetic sealing without added preservatives. Other products, depending on formulation and processing method, may use authorised preservatives.

Is “no preservatives” automatically better?

No.

“No preservatives” describes the absence of one functional class of additives. It does not describe the complete quality of the food.

One product may not need preservatives because its thermal process and closure provide the necessary stability. Another may use an authorised preservative because it is a different type of product.

Raw-material quality, ingredient balance, origin, texture, flavour, processing and producer transparency tell you more than a single marketing phrase.

What about a short ingredient list?

A short ingredient list can indicate a simple formulation, but it is not a guarantee of superior quality.

A jar of peppers may contain peppers, water, salt and an acid and still be an excellent product. Another jar with an equally short list could start with much poorer raw material.

The ingredient list explains composition; it cannot replace evaluating the food itself.

What does an E-number really mean?

An E-number is an identification system for additives authorised for use in the European Union.

It is not a risk rating and it is not a “processing score”. The number identifies a substance whose use is regulated for specific foods and conditions.

EFSA evaluates additive safety, and EU rules determine which additives may be used, where and under what conditions.

Labels must normally identify both the functional class and the specific substance, either by name or E-number—for example, “antioxidant: ascorbic acid” or “antioxidant: E 300”.

Is “natural” the opposite of “additive”?

No.

“Natural” is a much broader term relating to origin or marketing perception. “Additive” describes the technological use of a substance under a legal definition.

Ascorbic acid occurs naturally in fruit and vegetables. When it is intentionally added for an antioxidant function, it is being used as an additive and can be identified as E 300.

That is why “chemical-sounding name = bad” and “familiar name = good” is not a useful way to read a label.

Other additives you may see in vegetable products

Depending on the product, labels may also include:

  • firming agents, used to help maintain fruit or vegetable tissue;
  • stabilisers;
  • thickeners in sauces and prepared products;
  • sequestrants that bind certain metal ions;
  • permitted colours where the category allows them.

Different foods need different formulations. Roasted peppers, pickled vegetables and vegetable sauces should not be expected to use the same ingredients.

How to read a label without dividing ingredients into “good” and “bad”

Ask three questions.

What is the function? Look for terms such as antioxidant, acid, preservative or stabiliser.

What is the substance? It may be listed by name or E-number.

Does its role make sense in this product? An antioxidant in an oxidation-sensitive food can have a clear function; an acid in an acidified preserve can as well.

Then look at the whole product: vegetable content, drained weight, origin, packing medium, storage instructions and producer.

Additive safety in the European Union

Authorised additives cannot simply be used in any food at any amount.

The EU operates a positive list with specific conditions of use. EFSA assesses safety, including dietary exposure, and substances are reviewed as scientific knowledge develops.

That does not mean shoppers have to prefer foods with more additives. It means the presence of an authorised additive is not, by itself, evidence that the food is unsafe.

What should matter when buying vegetable preserves?

If you prefer simpler formulations, choosing shorter ingredient lists can be perfectly reasonable. The important part is understanding what each ingredient does.

In a good vegetable preserve, the vegetable should remain the central ingredient. Technological ingredients, when used, should have a clear purpose and appear transparently on the label.

The useful distinction is not “zero E-numbers equals quality” versus “any E-number equals poor quality”. It is understanding what you are buying and why the product is formulated that way.

Conclusion

Acids, antioxidants and preservatives are not synonyms.

Acids increase acidity; acidity regulators control it; antioxidants protect against oxidation; and preservatives protect against microbiological deterioration within their authorised uses.

A preserve may be stable without added preservatives because heat treatment and hermetic sealing provide the necessary protection, while another formulation may use additives for specific technological reasons.

Reading a label well is therefore not about counting E-numbers. It is about understanding function.
