Why do onions make you cry and which methods really reduce the irritation?

Onions do not make us cry simply because they have a strong smell. The process begins when a knife breaks plant cells. Enzymes and sulphur-containing precursors that were stored separately then mix and rapidly form volatile compounds that can reach the eyes. The familiar irritation is a chemical response to cutting, not the normal definition of an onion allergy.

Understanding the process makes it easier to separate methods that genuinely reduce exposure from kitchen tricks that work only inconsistently.

What happens when an onion is cut

Onion cells keep sulphur compounds and enzymes in different compartments. Cutting destroys those barriers and starts a series of reactions. One of the products is a volatile lachrymatory factor that disperses through the air.

When it reaches the moist surface of the eye it causes irritation and activates the tear glands. Tears are a protective response that dilutes and washes away the irritant.

Why some onions make you cry more

Intensity varies with cultivar, growing conditions, sulphur availability, storage, temperature and freshness. Two onions that look similar can release different amounts of irritating compounds.

A sharp knife really can help

A well-maintained edge cuts more cleanly and crushes fewer cells than a blunt knife. Less crushing means less uncontrolled juice on the board and faster preparation.

It cannot eliminate the lachrymatory factor, because even clean slicing breaks cells, but it is one of the most sensible measures because it improves both technique and speed.

Cooling the onion can reduce volatility

A cold onion generally releases volatile compounds less rapidly than a warm one. Refrigerating it for a short period before cutting can make the job more comfortable for sensitive cooks.

There is no need to freeze it. Partial freezing damages texture and can make safe cutting more difficult. The goal is cooling, not turning the bulb into ice.

Ventilation works for a simple reason

If an extractor fan or air flow carries vapours away from your face, less irritant reaches the eyes. This acts directly on exposure.

Working near a running cooker hood is more rational than tricks such as holding bread in your mouth or placing unrelated objects on the board.

Distance and posture matter too

Putting your face very close to the cutting board increases the concentration of vapours around the eyes. Standing upright with the board at a sensible height gives you more distance.

Avoid leaning directly over the onion after making many fine cuts.

Should you cut onions under water?

Water can trap some volatile compounds, but cutting a slippery onion under water introduces a more important problem: knife safety. Grip and visibility become worse.

We do not recommend it as a home technique. There are safer ways to reduce irritation.

Does wetting the knife work?

It may have a limited effect because some compounds dissolve in moisture, but it does not change the fundamental reaction. A wet knife should also never be handled in a way that reduces control.

If you want to prioritise measures, sharpness, cooling, speed and ventilation make more practical sense.

Leaving the root end until last

A common claim says all the irritating substance is concentrated exclusively in the root. That is too simple. Relevant precursors are distributed throughout onion tissue, although concentrations can vary.

Keeping the root end intact for part of the process can help the onion stay together and make neat cutting easier, but it does not guarantee tear-free chopping.

Goggles are the most direct barrier

Close-fitting glasses that reduce vapour reaching the eye surface can be very effective. Ordinary spectacles are open at the sides and protect less, although they may still alter air flow.

This is unnecessary for an occasional onion, but it is a logical physical solution for very sensitive people or high-volume preparation.

Does lighting a candle help?

This popular trick is inconsistent and depends heavily on air currents, distance and how much onion is being chopped. An open flame is also not an ideal primary solution around kitchen tools and combustible materials.

What about lemon, vinegar or bread in the mouth?

They may change the subjective experience or coincide with lower exposure, but they do not act as directly as cooling, ventilation or a physical barrier.

If a trick does not clearly affect cutting, volatility or eye contact, expectations should remain modest.

  1. Use a sharp knife and stable board.
  2. Chill the onion if you are particularly sensitive.
  3. Run the extractor fan or improve ventilation.
  4. Keep your face a comfortable distance from the board.
  5. Cut decisively and avoid unnecessary crushing.

These measures cannot promise zero tears, but they reduce exposure without making basic kitchen work awkward.

Is crying from onions dangerous?

Normal irritation is temporary and eases after moving away from the source and ventilating. A severe reaction involving breathing difficulty or symptoms beyond ordinary eye irritation is a different situation and requires appropriate medical attention.
