Cheese colour looks like a simple clue, but it is easy to misread. Deep yellow does not by itself prove that a cheese is older, fattier or better. Milk pigments, especially carotenoids, matter, as do moisture, oxidation, rind development and ripening. European rules also permit certain colours in defined cheese categories under specific conditions. It is therefore useful to separate the natural colour of the paste, the colour of the rind and deliberately added colour.

1. Milk already has a colour signature
Milk fat can carry fat-soluble pigments. In cow milk, beta-carotene contributes yellow tones because some passes into cheese. Goats and sheep metabolise carotenoids differently and their cheeses are often whiter, although breed, feed and season still create variation.
A well-aged goat cheese can therefore remain pale ivory while a younger cow cheese may look distinctly yellow.
2. Moisture changes visual intensity
Fresh cheese contains a great deal of water and commonly looks white or pale ivory. As moisture is lost, solids concentrate and colour can appear deeper. Exposed surfaces can also darken through drying and oxidation.
This creates some relationship between ageing and colour, but not a reliable clock. Milk species, moisture and rind treatment can produce very different colours at similar ages.
3. Read rind and paste separately
An orange rind does not mean the interior paste is orange. Washed-rind microbial communities can create red-orange pigments. Other cheeses use paprika, wine, ash, wax or coatings that change the exterior.
Cutting the wheel reveals a separate layer of information. Always distinguish colour belonging to the cheese body from colour created by the ripening or protective surface.
4. Permitted colours and the ingredient list
EU additive rules permit specific colours for defined cheese categories. Carotenes and annatto derivatives, for example, can be used under particular conditions in some ripened cheeses. Permission does not mean every cheese uses them.
When colour is deliberately added, labelling rules apply. The ingredient list is therefore the right place to check whether appearance comes only from milk and maturation or also from added colour.
5. Why orange does not mean more fat
Yellow and orange are often associated with fat because milk fat carries natural pigments in some cheeses. But colour depends on pigment concentration, moisture and possible added colour, not on a direct line to fat percentage.
Two cheeses with similar fat content can look very different. A pale cheese is not automatically low-fat. Nutrition information, not colour, answers that question.
6. Interpreting colour when buying
Colour becomes useful when you already understand the style. Pale ivory can be normal in Manchego; goat cheese is often whiter; washed rinds may show orange on the surface. Producer information and labels complete the picture.
Avoid rules such as “more yellow means more aged”. Colour can support identification but cannot replace milk type, ingredients, maturation or condition.
7. Colour changes that can signal a problem
Although much colour variation is normal, an unexpected change should be interpreted together with smell, texture and storage history. New colours that do not belong to the style, pink or black patches where they are not expected, or discolouration accompanied by slime may require disposal or product-specific advice.
Do not judge from a generic internet photograph alone. Some cheeses deliberately have grey, blue, orange or black surfaces. The right question is whether the colour belongs to that specific cheese’s normal design and whether it appeared together with spoilage signs.
