Vegetables do not share one single nutritional profile. The category includes leaves, roots, bulbs, fruits, stems, flowers and tubers with very different compositions. Even so, many have several features in common: high water content, fibre, vitamins, minerals and a wide range of plant compounds, usually with low to moderate energy density.

The useful question is not simply “which vitamin do vegetables contain?” but which vegetables stand out for each nutrient. Peppers can be particularly rich in vitamin C; carrots in provitamin-A carotenoids; leafy greens in folate and vitamin K; and potatoes in potassium and carbohydrate.

Fibre: one of the most consistent contributions

Fibre is not limited to one vegetable. It forms part of plant structure and contributes bulk. The amount per 100 grams varies widely: artichokes, carrots and lettuce are not nutritionally interchangeable.

Cooking softens plant tissue but does not automatically remove all fibre. It can change fibre structure and texture, while blending changes particle size rather than simply deleting fibre.

Vitamin C is not just found in fruit

Some vegetables are major vitamin-C sources. Peppers can provide particularly high amounts, while broccoli and several cabbages also contribute significantly.

Vitamin C is water soluble and relatively heat sensitive. Cutting, long storage, boiling in plenty of water and prolonged cooking can reduce it. That does not mean cooked vegetables become “nutrient free”.

Carotenoids and vitamin A

Carrots, pumpkin, peppers and many leafy greens contain carotenoids. Some, including beta-carotene, act as provitamin A, meaning the body can convert them into vitamin A as needed.

Unlike vitamin C, certain carotenoids can become more accessible when cooking breaks down plant cell structures. Consuming them with some fat can also help absorption because they are fat soluble.

Folate and leafy greens

Green leafy vegetables are strongly associated with folate. Spinach, chard and other leaves can make a meaningful contribution. As with other water-soluble vitamins, cooking method affects how much remains in the food and how much moves into the cooking liquid.

Minerals: potassium, magnesium, calcium and iron

Vegetables provide minerals, but not all in the same proportions. Potassium is widely distributed. Magnesium is present in many plant tissues, while leafy greens can also supply calcium and iron.

Iron requires an important qualification: vegetable iron is non-haem iron, which is absorbed differently from haem iron in meat and other animal foods. Comparing milligrams per 100 grams alone therefore does not tell the whole story.

What happens to nutrients during cooking?

There is no single answer. Boiling can move water-soluble vitamins and minerals into the cooking water. Steaming, microwaving or shorter cooking can reduce losses in some cases. At the same time, cooking can increase the availability of certain carotenoids and make some vegetables easier to eat in larger amounts.

“Raw always retains more” is therefore an oversimplification. The nutrient, vegetable and cooking method all matter.

Fresh or frozen?

Freezing does not turn vegetables into vitamin-free foods. Frozen vegetables are often blanched before freezing, which can reduce some sensitive nutrients, but low temperature then slows many deterioration reactions.

Do vegetables contain protein?

Yes, but most are not protein-dense compared with pulses, meat, fish, eggs or dairy foods. Peas, broccoli and some leafy greens can provide more than other vegetables, but “contains protein” is not the same as “a concentrated protein source”.

What about carbohydrate?

This also varies. Lettuce, courgette and cucumber contain relatively little, while potatoes, sweet potatoes and maize contain more starch. The word “vegetables” covers too many different foods for one universal carbohydrate figure.

The simplest way to use vegetable diversity

In practical terms, varying colours, plant families and preparation methods is more useful than searching for one “most nutritious vegetable”. Leaves, cruciferous vegetables, roots, fruits and tubers provide different profiles and complement each other.
