Low back of Australian Wagyu BMS 8-9 in a piece of about 2.6 kg. It is distinguished from the high back by the area of provenance within the animal, although both belong to the selection of Wagyu with high marbled. This presentation allows to cut intercotts of controlled thickness and adapt each ration to the menu.
The 2.6 kg cut is designed for those who prefer to take the piece before cooking. Instead of focusing only on the BMS 8-9 level, it is also appropriate to compare the low back with the high back alternatives and the individual intercots.
