This format is aimed at those who want to know the cocoa bean before converting it into chocolate. It is appropriate to differentiate it from a ready-to-melt product or a soluble cocoa.

**NOTE: These cocoa seeds are not toasted but, like all cocoa seeds for sale, they are fermented. In the fermentation process, which takes place in the country of origin, cocoa reaches temperatures of up to 50oC. Therefore, although it has not been roasted, it has been fermented in order to develop aromas, flavors and lower its level of acidity and astringence.
In order to achieve greater food security, we strongly advise your roasting at a temperature of about 120oC for - at least- 30 minutes and so, do not lose the natural aromas that this cocoa contains.
