Tasting two Picual, two Arbequina or two Cornicabra oils and finding very different profiles is not a contradiction. Cultivar provides a genetic base, but oil is the result of fruit grown in a particular place and season, harvested at a particular stage and transformed by a mill.

Cultivar is the starting point, not the final result

Soil, altitude and exposure change ripening
Soil affects root depth, drainage and water availability. Altitude and exposure change temperature and sunlight and can delay or accelerate ripening. Within one district, a cooler slope and a warm low plot may reach harvest at different physiological stages.
That shifts green and ripe aromas, phenolics and yield. There is no magic soil that guarantees better EVOO, but environment sets the limits within which the tree grows.
Ripeness is the easiest difference to demonstrate
An olive picked early in colour change does not have the same composition as fruit of the same cultivar harvested weeks later. Early harvests often target green aromas and greater bitterness or pungency; later fruit yields more oil and can shift toward ripe, gentler profiles.
Two bottles labelled 100% Arbequina can therefore be very different: one green and lively, the other sweet and ripe. Both can express the same cultivar at different stages.
From tree to mill: time has a flavour too
Healthy olives can deteriorate if held too long before milling. Bruising, fermentation and fruit temperature encourage defects that no cultivar can compensate for. Careful harvesting, transport and rapid milling are foundations of good virgin oil.
Separating ground fruit, damaged olives or different maturity levels matters too. Two mills receiving the same cultivar can begin to diverge before extraction itself starts.
Extraction decisions change the profile
Milling breaks tissues and triggers reactions responsible for aroma compounds. Crushing, malaxation time and temperature, oxygen and separation settings influence yield and profile. Excessive temperature or unnecessarily long processing can favour aroma loss or oxidation.
“Cold extraction” does not mean every oil is identical. There is technical room within legal limits, and each mill balances yield, aroma, phenolics and stability.
Filtration and storage: oil keeps evolving
Fresh oil contains varying amounts of water and particles. Filtration removes much of them and usually improves stability. Unfiltered oil can feel different initially, but moisture and sediment require careful management.
Oxygen, light and heat degrade aroma. Two oils identical at the mill can diverge months later if one is protected and the other exposed. Storage is part of final flavour.
How to compare oils to learn
To study origin, choose two monovarietal oils from the same harvest and cultivar but different areas. To study ripeness, compare early and later harvests. To study processing, compare producers in one district. Changing one variable at a time teaches much more.
Taste without using colour as a clue and record fruitiness, bitterness, pungency, persistence and balance. Then read label and technical data. Cultivars have identity, but that identity is flexible and expressed through place and human decisions.
