100% Ibérico de Bellota shoulder ham combines pure Ibérico breed with the acorn-fed finishing category. In Spain it is identified by the official black seal.

Shoulder ham comes from the front leg and is smaller than a full jamón. It normally has a different meat-to-bone ratio and a characteristically intense flavour, making it a practical premium option for smaller households or more moderate consumption.

What the black seal means

100% Ibérico refers to breed, while de bellota refers to the acorn-fed finishing stage. The black seal identifies products that combine both conditions.

Los Pedroches PDO or non-PDO

Our selection includes shoulder hams with and without Los Pedroches PDO. PDO certification adds a protected geographical link and its own production requirements; non-PDO products may still fully qualify as 100% Ibérico de Bellota.

Whole or sliced shoulder ham

A whole piece suits regular consumption and traditional carving. Sliced packs are convenient for smaller servings and allow you to open only what you need.

Shoulder ham or full jamón?

The right choice depends on household size, consumption frequency, yield and budget. Shoulder ham is smaller and generally offers a more compact way to enjoy the same black-label category.
