Iberian ham is a nutrient-dense cured food. It provides mainly protein and fat, together with minerals such as iron and zinc and several B-group vitamins. There is, however, no single nutrition figure that applies to every Iberian ham. Fat content, curing time, the muscle sampled, feeding system and producer can all change the values per 100 grams.
That is why it is useful to separate the general nutritional profile of the food from the figures for a particular ham. The nutrition label on the product you are actually eating is always the most precise reference.
Protein: one of its main nutrients
Iberian ham is particularly rich in protein. A study of 54 packs of 100% Iberian acorn-fed ham reported an average of about 35.8 g of protein per 100 g. This is a high value, but it should not be assumed for every ham because the final figure depends on factors such as fat content and water loss during curing.
Curing removes water and concentrates the remaining components. This helps explain why cured ham can contain more protein per 100 g than the fresh meat from which it came; curing does not create extra protein.
Fat and oleic acid
Fat is another central component of Iberian ham and contributes strongly to texture, aroma and juiciness. In the study above, average fat content was about 26.3 g per 100 g. Oleic acid was the dominant fatty acid, accounting for just over half of the fatty acids measured.
The fatty-acid profile is not identical across all production categories. Feeding and management have a clear influence. Research on Iberian ham fat generally finds a higher proportion of oleic acid and monounsaturated fat, and a somewhat lower proportion of saturated fat, in acorn-fed animals than in feed-finished groups.
Iron, zinc and other minerals
Iberian ham also supplies minerals. In the 100% Iberian acorn-fed sample, average iron was about 27.6 mg/kg, or roughly 2.8 mg per 100 g, while zinc was around 4.4 mg per 100 g. Magnesium, phosphorus and other minerals naturally present in muscle tissue were also detected.
These figures are useful as an indication of scale, not as guaranteed values for every ham. Mineral composition can vary between animals, muscles, curing processes and batches.
B-group vitamins
Like other animal foods, Iberian ham provides B-group vitamins. Published analyses have identified riboflavin (B2), niacin/nicotinamide (B3), pantothenic acid (B5) and pyridoxine (B6), among others. Exact amounts vary and manufacturers do not always declare these micronutrients on labels.
Salt deserves separate attention
Ham is preserved by salting and curing, so salt is nutritionally significant. The same study reported an average of about 4.24 g of salt per 100 g. Individual products can be lower or higher. Anyone monitoring sodium intake should check the label and consider the portion in the context of the whole diet.
How many calories does it contain?
Energy depends largely on fat content. The analysed 100% Iberian acorn-fed sample averaged about 382 kcal per 100 g. A normal serving is usually much smaller than 100 g, so the practical energy contribution should be calculated from the amount actually served.
Nutritional summary
Overall, Iberian ham stands out for protein density, fat with a substantial oleic-acid fraction, iron, zinc and several B vitamins. It is also a salty and energy-dense food. For accurate comparisons, use products in the same state and, whenever possible, the manufacturer's nutrition label.
