Open a tray of beef and you will often find a reddish liquid at the bottom. It is commonly described as blood because the colour makes that explanation seem obvious. In reality, most of the liquid is water released by muscle tissue, coloured by soluble proteins and pigments, particularly myoglobin.
This is more than a food-science curiosity. Understanding the liquid makes it easier to judge meat sensibly, avoid treating a normal change as spoilage and understand why a cut may release more moisture after freezing, thawing, cutting or several days in a package.
What exactly is the red liquid in a meat package?
Muscle contains a large amount of water. Lean beef is roughly three-quarters water. During slaughter, most circulating blood is removed. The liquid that later collects in a tray—often called purge—comes mainly from natural moisture leaving muscle cells and carrying soluble components with it.
One of those components is myoglobin, an oxygen-binding protein in muscle. Its pigment can colour the water pink, red or dark red. That is why the liquid can look so much like blood even though its origin and composition are different.
USDA food-safety guidance explicitly explains that blood is largely removed during slaughter and that the red liquid in packaged fresh beef is principally natural muscle moisture mixed with proteins. A small pool of reddish liquid therefore does not, on its own, mean poor handling or excessive blood.
Myoglobin and haemoglobin are different
The confusion is understandable because both blood and muscle contain proteins associated with oxygen. Haemoglobin is found mainly in red blood cells and carries oxygen through the bloodstream. Myoglobin is located inside muscle cells and helps store oxygen in muscle.
Myoglobin concentration varies with species, age and muscle type. This is one reason beef generally has a deeper colour than meats with less myoglobin, and why two muscles from the same animal do not necessarily have exactly the same shade.
Why does one tray contain much more liquid than another?
There is no fixed amount of purge. It can vary between two perfectly sound cuts stored correctly. Muscle structure, cutting, storage time, pressure inside the pack, temperature and previous freezing can all affect how much water the tissue retains.
Small portions expose more cut surfaces than a large intact joint. Ground meat has had its muscle structure disrupted much more extensively. The weight of meat stacked in a pack can also squeeze moisture from the pieces underneath. A larger puddle is therefore not, by itself, proof of deterioration.
Freezing and thawing can increase purge
Freezing often changes the amount of liquid that appears. Ice crystals can damage some cellular structures. When the meat thaws, those cells may retain water less effectively, so more moisture leaves the tissue.
This does not automatically make the meat unsafe. It can, however, affect juiciness and texture, particularly after slow freezing, temperature fluctuations or long frozen storage. Does the colour of the liquid tell you whether meat is fresh?
Not by itself. Meat colour changes with the chemical state of myoglobin and its exposure to oxygen. In low-oxygen conditions, such as vacuum packaging, beef can look burgundy or purplish. After exposure to air, it can become brighter red. With time, oxidation can produce brownish pigments.
Bright red therefore does not automatically mean fresher, and a darker colour does not automatically prove spoilage. Judge the product using the date, refrigeration history, smell, surface texture and condition of the package as well as appearance.
Which warning signs matter more?
A little reddish purge is normal. The situation is different when several abnormal signs appear together. Meat should not be eaten when it develops a clearly unpleasant persistent odour, a slimy or distinctly tacky surface, unexplained package swelling, or when the cold chain has been broken and there is no reliable way to know how long it remained too warm.
USDA guidance notes that colour changes can be normal consequences of myoglobin chemistry, whereas spoilage is more likely to be accompanied by other signs such as off odours, stickiness or slime.
Should you wash the meat to remove the liquid?
No. Rinsing raw meat under running water does not make it safer and can spread microorganisms through splashes onto the sink, hands and nearby surfaces. If a cut has a wet exterior and you want it dry before cooking, remove it from the package and pat it gently with disposable kitchen paper, then discard the paper.

Does the purge contain flavour?
It contains compounds from the meat, but there is no rule that it must always be kept. For pan-searing, drying the surface is usually useful. In a stew, juices from a sound package can be incorporated when the food is going to be cooked thoroughly. This is a culinary decision, not a matter of “removing blood”.
Why can cooked meat also release pink juices?
Pink juice from cooked meat should not simply be labelled blood either. Colour can come from muscle pigments and is affected by temperature, pH, myoglobin concentration and cooking method. Crucially, colour is not a reliable thermometer: ground beef can brown before it has reached a safe temperature, while other meat can retain some pink colour after reaching it.
When safety depends on adequate cooking—especially with ground meat—use a food thermometer and an appropriate target temperature rather than judging only by the colour of the juices.
In short: what that red liquid really means
- It is not mostly blood; it is muscle water coloured by proteins and pigments such as myoglobin.
- It can appear in perfectly normal, correctly refrigerated meat.
- Freezing and thawing can increase it because muscle fibres retain water less effectively.
- Red, purple and brown shades are partly consequences of myoglobin chemistry and oxygen exposure.
- Odour, texture, packaging, temperature and time are more useful spoilage clues than one isolated colour.
- There is no need to rinse raw meat; patting the surface dry is the better option when needed for cooking.
