Once extracted, extra virgin olive oil does not necessarily go straight into a bottle. Many mills keep finished oil in large bulk tanks for weeks or months. This is not passive parking: the oil is already made and must be protected so that it reaches bottling with as little deterioration as possible.
The main threats remain familiar: oxygen, light, unsuitable temperature, water and sediment, foreign odours and contamination. A good oil cellar is designed to limit these factors while keeping lots separated by origin, cultivar, harvest date or quality.
Why stainless-steel tanks are widely used
Food-grade stainless steel is common because it is durable, relatively inert and easy to clean. A suitable tank can be closed, cleaned thoroughly and designed for sampling, transfers and removal of material that settles at the bottom.
Opacity is another advantage. Light does not pass through steel, which matters because light can accelerate oxidation reactions in oil. Protecting bulk oil from light is therefore much easier than protecting a clear retail bottle left on a kitchen counter.
Headspace and oxygen
When a tank is not completely full, gas occupies the space above the oil. If that headspace contains air, oxygen is available for oxidative reactions. Good storage practice therefore aims to minimise the oil's contact with air.
The International Olive Council recommends measures such as saturating tank headspace with inert gases including nitrogen or argon and, where practical, maintaining a slight inert-gas environment in connecting pipes. The purpose is not to add a flavouring or ingredient to the oil; it is to displace oxygen around it.
Storage temperature
Heat speeds many chemical reactions, so high temperatures are undesirable for bulk EVOO. Excessive cooling can cause partial crystallisation and make pumping or filtration more difficult, although cold-induced cloudiness or solidification is not in itself proof that an oil is damaged.
International Olive Council good-practice guidance gives a storage-room reference range of roughly 13 to 25 °C. In practice, mills value thermal stability and avoid unnecessary extremes. The range should not be treated as a magic number but as a framework for controlling heat and large temperature swings.
Sediment and residual moisture
Freshly separated oil can contain small amounts of vegetation water and fine particles. If these remain concentrated at the bottom for long periods, undesirable reactions and sensory defects can develop. Mills therefore use purging, settling, transfers or filtration depending on their chosen production style.
Unfiltered oil can be a legitimate commercial style, but it requires careful management because it contains more suspended material. “Unfiltered” should not mean “unmanaged”; producers still have to decide when to remove bottoms and how long a lot can safely remain in that condition.
Keeping different lots separate
A cellar may contain oils from different orchards, cultivars, harvest dates and quality grades. Separate tanks preserve options. A lot can later be bottled as a single-cultivar oil, blended into a coupage or diverted to another use if its quality does not meet a particular target.
Traceability follows the tank. Good storage means knowing what is inside, when it was filled, which analyses belong to the lot and what operations have taken place. This is particularly important in mills handling olives from many growers.
Transfers and movement
Moving oil between tanks may be necessary to separate sediment, organise batches or prepare for bottling. Every transfer should use clean equipment and minimise turbulence and air intake. Pumps, pipes, seals and valves are part of storage quality just as much as the tank itself.
A well-run cellar avoids unnecessary movement. The aim is not to handle the oil constantly, but to intervene when there is a technological reason and to do so under controlled conditions.
Does EVOO improve with months in a tank?
Extra virgin olive oil is not a wine designed to mature for years. It is a product that benefits from protection against oxidation and from consumption within a reasonable period. Some bitterness, pungency or aroma may soften with time, but that change should not automatically be described as improvement.
The job of the cellar is preservation rather than deliberate ageing. Better control of oxygen, temperature, light and sediment generally means a slower loss of the oil's original characteristics.
Immediately before bottling
Before filling, the mill or bottler selects the relevant tank or blend, carries out the required controls and filters where appropriate. The oil then travels through pipes to the filling line. Minimising air contact and choosing protective retail packaging remain important at this final stage.
The condition of oil in the bottle is therefore the result of a chain. An excellent fresh oil can deteriorate during months of poor bulk storage; a carefully designed cellar helps the bottled product remain as close as possible to the oil that left extraction.
