How much milk makes one kilogram of cheese: yield and why there is no universal number

The claim that ten litres of milk make one kilogram of cheese is repeated so often that it sounds like a physical law, but it is only a rough approximation for certain milks and styles. Actual yield depends on casein and fat content, how much of those solids are recovered in curd, how much moisture the finished cheese retains and how much is lost during cutting, draining, cooking and pressing. Comparing yields without composition adjustment can therefore be misleading.

What cheese yield means

In simple terms, yield is the mass of cheese obtained from a given mass or volume of milk. The problem begins when cheeses of different composition are compared: a high-moisture cheese weighs more because it retains more water, while a hard cheese loses much of that water before sale.

Professional comparisons therefore use moisture- and salt-adjusted yield. Gross yield is useful for accounting but not always for judging process performance.

Casein is a major driver

Most of the structural protein in ordinary cheese is casein. Milk with more casein can form more curd when recovery is efficient. Fat also contributes mass and sensory value, and part of it can be lost to whey if curd is cut too aggressively.

Not all milk protein enters conventional rennet cheese. Many whey proteins remain in the liquid and can later be recovered in whey cheeses such as ricotta.

Cow, goat and sheep milk do not yield the same

Average composition differs by species. Sheep milk commonly contains more total solids, protein and fat than cow milk, so many sheep cheeses produce more cheese per kilogram of milk. Goat milk has its own composition and breed-related casein differences that affect coagulation.

That does not make one species superior. More concentrated milk comes from a different production system and should be judged in context.

Final moisture can change the number dramatically

If two vats recover the same protein and fat but one retains more water, the wetter cheese weighs more. This can be perfectly appropriate for a soft cheese, yet it is misleading to call the number better efficiency when comparing it with a dry cheese.

Fresh and aged cheeses should therefore never be compared only by litres of milk per kilogram of finished product.

Where yield is lost

Rough or excessively fine cutting creates curd fines that escape with whey and carry protein and fat. Heating too quickly can make grains brittle. Pressing, stretching and poor milk standardisation can also increase losses or make diagnosis harder.

Whey provides useful clues: excess fat or visible curd particles may show that valuable solids are leaving the vat.

Why ten litres per kilogram is a poor universal rule

The round number can be close for some pressed cow-milk cheeses, which is why it persists. A moist fresh cheese may require much less milk per kilogram of product, while a very dry cheese or milk with fewer solids may require more.

Litres and kilograms of milk are not exactly identical either, so professional plants normally work with mass and composition rather than folklore ratios.

What buyers should use the number for

Yield helps explain production economics but is not a direct quality score. A moist cheese is not inferior because it needs less milk per kilogram, and a dry aged cheese is not automatically better because it concentrates more solids.

Milk, origin, process, maturation and producer remain more useful buying information.
