1. Two Murcian PDOs that should be kept separate

Murcia al Vino is visually associated with the reddish-purple rind produced by red-wine washing within its own protected method. That treatment does not define Queso de Murcia. The label should also state clearly which PDO the cheese belongs to.

Do not rely only on colour, which can be distorted by photography or surface treatments. The complete protected name is the decisive check.

6. Fresh or aged: choosing by use

Fresh Queso de Murcia suits salads, breakfast and dishes where moisture and gentle acidity are useful. Aged cheese offers more concentration, a firmer cut and enough persistence for a cheese board or stronger accompaniments.

Choosing between them is not choosing between inferior and superior. They are different expressions of the same Murcian goat-dairy foundation.
