Priego de Córdoba PDO: varieties, EVOO profile and how to identify it

Priego de Córdoba is a PDO in Córdoba’s Subbética region, strongly associated with mountain olive groves. Its official information highlights the altitude of much of the groves and the importance of Picuda, Hojiblanca and Picual.

Olive oil also requires clear separation of concepts. Extra virgin is a product category; variety identifies the olive cultivar; a PDO certifies origin and a specification; and harvest year, ripeness and milling help explain the profile of a particular bottle. None of those words on its own describes the entire oil.

Picuda, a variety strongly linked to the area

Picuda has particular importance within the PDO territory. It may appear as a monovarietal or in blends. It should not be assigned one fixed flavour: ripeness, harvest year and processing can change the result substantially.

Hojiblanca and Picual complete the picture

Hojiblanca brings another major Andalusian varietal identity, while Picual is fundamental in Spanish olive growing. Blending varieties can build different profiles and a blend is not inherently inferior to a monovarietal oil.

Altitude and slope as part of the context

The PDO notes that a significant share of its olive groves sits at high altitude and on steep slopes. These conditions influence management, harvesting and microclimates. They are not an automatic formula for quality, but help explain production character.

How to recognise a certified oil

Look for the Priego de Córdoba PDO name and its certification elements in addition to the extra virgin category. The producer’s brand and bottle design are commercial; PDO identification is what certifies the protected origin.

Priego de Córdoba-specific questions

Does Priego de Córdoba PDO simply mean “Picuda oil”?

No. Picuda is highly representative, but the designation is better understood alongside Hojiblanca and Picual. The varietal composition of a particular oil should be read on that product’s information.

Are all EVOOs from Córdoba province Priego de Córdoba?

No. The PDO applies to a defined territory and specification, and Córdoba also contains other olive-oil designations.

Does altitude create one fixed flavour?

No. Slope and altitude are part of the agronomic context, but harvest timing, fruit maturity, milling and varietal composition all affect the finished profile.

What to check on a bottle

First verify certification; then look at declared varieties, harvest information when available, format and storage. To place Priego within the national picture, return to our Spanish olive-oil PDO guide.
