After salting, a ham is not simply “waiting” until a date is reached. Over months—and for many hams, years—its moisture content, texture, salt distribution and many aroma-related compounds evolve.
A designation of origin, a production area or a curing tradition provides context but does not replace reading the whole product. With Iberian ham it helps to separate three layers: geographical certification where applicable, the legal breed and feeding category, and the producer’s decisions during salting, drying and maturation. Keeping these layers separate prevents shortcuts such as assuming that a famous place name always means acorn-fed or 100% Iberian.

What the drying room is trying to achieve
Drying must progress from the outside inward without uncontrolled moisture loss. The producer manages the environment and observes each batch. Weight, fat cover and size mean that two hams do not necessarily evolve at exactly the same speed.
What changes when the ham moves into the cellar
During long maturation, reactions involving proteins and lipids continue. Texture becomes characteristically cured, flavours integrate and aromatic compounds develop. Time alone does not guarantee quality; what matters is how the ham evolves.
Why fat is so important
Fat helps protect against excessive drying and contributes to the aromatic profile. Its amount, distribution and composition influence juiciness, sheen and persistence in the mouth.
The cala and producer assessment
Traditional production uses experience, inspection and tools such as the cala to evaluate aroma at specific points. These are process-control decisions, not shortcuts that can create quality without suitable raw material and curing.
The journey of the ham: from controlled drying to mature development
The drying room and cellar are related but not identical stages. Early on, gradual moisture loss and the physical evolution of the piece are central. In the cellar, extended maturation, aroma development and producer assessment become increasingly important.
What the producer controls and what the producer observes
The process is not reduced to setting one temperature. Weight change, fat, surface condition, aroma and the overall behaviour of each batch are observed. Experience helps determine how long a piece needs and when it is ready.
The cala belongs to product assessment, not geographical classification
The cala and other sensory checks help assess the evolution of a ham. They do not replace traceability or turn a ham into a PDO product. They are process tools.
