How much iron does Iberian ham contain?

Iberian ham naturally contains iron because it is made from muscle tissue. The exact amount is not identical in every ham, so rigid figures can be misleading. Breed, feeding, the muscle sampled, curing and the final composition of the product can all influence the result.

How much iron does it provide per 100 g?

In a composition study of 54 packs of 100% Iberian acorn-fed ham, average iron content was 27.64 mg/kg. In the unit more commonly used on nutrition tables, that is approximately 2.76 mg of iron per 100 g.

This provides a useful indication of scale, but it does not mean every Iberian ham contains exactly 2.76 mg/100 g. For a particular brand or product, a manufacturer analysis or declared nutrition information is more specific.

How much iron is in a serving?

Using 2.76 mg/100 g only as an example, a 30 g serving would provide about 0.83 mg of iron and a 50 g serving about 1.38 mg. The actual calculation should use the product-specific value whenever it is available.

What type of iron is found in ham?

Animal foods contain both haem and non-haem iron, with a meaningful haem-iron fraction in meat tissue. In general, haem iron is absorbed more efficiently than the non-haem iron that predominates in plant foods. This does not make ham the only or necessarily the best source of iron; dietary intake should be assessed as a whole.

Do acorn-fed, field-fed and feed-finished categories change iron?

The most consistent nutritional differences documented between feeding systems concern fat composition, particularly oleic acid and the balance between monounsaturated and saturated fatty acids. It is not prudent to assign a fixed iron value to each feeding category. Compare product-specific analyses if iron is your focus.

Iron alongside protein and zinc

Iberian ham does not provide iron in isolation. It is also rich in protein and can provide meaningful zinc. In the cited study, average zinc was about 44 mg/kg, or roughly 4.4 mg/100 g. These nutrients contribute to the food's high nutrient density, alongside fat, energy and salt.

How to compare iron between two hams

When iron appears in a technical specification, make sure both products use the same unit. If one manufacturer reports mg/kg and another mg/100 g, divide the mg/kg figure by ten to convert it to mg/100 g. Then adjust for the actual serving. This prevents unit differences from looking like nutritional differences and lets you consider iron alongside protein, fat and salt.

Bottom line

A useful scientific reference for 100% Iberian acorn-fed ham is around 2.8 mg of iron per 100 g, but this is not a universal value. Actual composition varies. When comparing hams, use manufacturer data when available rather than inferring iron content only from label colour, breed percentage or feeding category.
