How much protein is in Iberian cured loin?

Dry-cured Iberian loin is one of the most protein-dense cured meats. There is still no single figure that applies to every producer and piece, because moisture loss during curing, fat content and recipe all change the final concentration.

Short answer: how much protein?

As a practical range, published references place cured loin at roughly 35–50 g protein per 100 g. Our current acorn-fed 100% Iberian loin declares 46 g/100 g.

At 46 g/100 g, a 40 g serving provides about 18.4 g protein, while a 50 g serving provides about 23 g.

Why do the figures differ?

Protein concentration is not determined by breed alone. In a cured product, the amount of water remaining after drying is crucial. Two loins from similar raw meat can end with different protein concentrations if one loses more moisture.

Fat content matters too. With similar moisture, a higher proportion of fat generally leaves a lower percentage of the product as protein. This is why claims such as “all 100% Iberian loin contains X grams of protein” should be avoided.

What do the references show?

MAPA's food sheet for dry-cured loin lists 50 g protein/100 g. A scientific study of sliced dry-cured Iberian loin analysed acorn-fed 100% Iberian and cebo samples from two companies and found roughly 35.6–40.1 g/100 g.

Our current acorn-fed 100% Iberian loin declares 46 g/100 g. Together, these data show consistently high protein with genuine product-to-product variability.

Does it contain more protein than Iberian ham?

It can, but not always. One study of acorn-fed 100% Iberian ham reported an average of 35.79 g/100 g. Many cured loins are above that figure, but a fair comparison should always use the labels of the two specific products.

How to calculate protein in your serving

protein in serving = grams eaten × protein per 100 g ÷ 100.

  • 30 g of a 46 g/100 g loin → 13.8 g protein.
  • 40 g → 18.4 g.
  • 50 g → 23 g.
  • 75 g → 34.5 g.

Is the protein complete?

Yes. Like other animal foods, cured loin provides all essential amino acids in adequate proportions. That does not mean it is necessary for meeting protein requirements; many animal and plant foods can do that. Its distinguishing feature is how concentrated the protein becomes after curing.

High protein is not the whole nutrition picture

Fat, salt and serving size also matter. Loin may be relatively lean compared with some other Iberian cured products, but it is still a salted cured meat and can contribute substantial sodium.

What changes the number most?

Moisture loss during curing and the balance between lean tissue and intramuscular fat are the main reasons two cured loins can show different protein values even when both are Iberian products.

The main references used are the Spanish Ministry of Agriculture (MAPA) food sheet for dry-cured loin and scientific studies on dry-cured Iberian loin. The MAPA sheet reports 50 g protein, 20.7 g fat and 3.7 mg iron per 100 g for dry-cured loin in general. Studies specifically analysing Iberian dry-cured loin have reported protein values around 35–40 g/100 g and meaningful differences in fat content between samples and commercial categories.

For that reason, when you need the exact value for a particular product, its own nutrition declaration takes priority. The acorn-fed 100% Iberian loin currently sold in our shop, for example, declares 46 g protein and 15 g fat per 100 g.
