One of the first things you notice when slicing a cured sausage is particle size. Some products clearly show chunks of lean meat and fat. Others have a much finer, more homogeneous interior.
That appearance is not accidental. Grind size is part of the formulation. It changes the physical structure of the meat mixture, fat distribution, binding between particles, chewing sensation and some aspects of moisture movement during drying.
“Fine” and “coarse” therefore describe more than looks.
What does grind size actually mean?
Meat and fat can be passed through grinder plates with different hole diameters or cut using other controlled chopping systems.
Smaller particles create a more uniform-looking mass. Coarser grinding leaves lean and fat pieces easier to identify.
Spanish meat-product rules explicitly allow chorizo to be made with a coarse or fine grind. Some protected products go further and specify grinder-plate ranges for particular formats.
What changes in the slice?
A coarse grind creates an obvious mosaic. Individual pieces retain more visual identity and fat appears as larger pale fragments.
A fine grind produces a more even cross-section and can look more tightly bound.
Neither appearance is a universal quality marker. Excellent traditional sausages exist at both ends of the spectrum.
How mouthfeel changes
Larger particles create a more varied bite. You can move between lean fragments, fat particles and the protein matrix binding them together. The result may feel more rustic or meat-forward.
With a fine grind, transitions are smaller and the texture can feel more uniform and compact.
Particle size never works alone, however. Fat level, final moisture, salt, fermentation and ripening can completely change the eating texture.
Grind size and fat distribution
In a minced cured sausage, fat is not merely a nutritional component; it is part of the physical architecture.
The size and distribution of fat particles influence juiciness, lubrication and aroma release. Fine grinding disperses fat differently from a coarse formulation with clearly visible cubes.
This helps explain why two sausages with similar total fat percentages can feel very different in the mouth.
Does grind size change drying?
It can contribute, but it is not the only variable.
Research on fermented dry sausages has examined meat particle size together with casing diameter and found that internal structure can influence moisture loss and cutting properties during drying.
Water moves through a network created by meat, fat and the spaces between them. Diameter, temperature, relative humidity, airflow, formulation and casing can be equally or more important.
It is therefore too simplistic to say that coarse sausage always dries more slowly, or always more quickly.
Grind size and binding
Chopping exposes meat proteins. With salt and mixing, those proteins help bind the sausage mass so it remains cohesive after stuffing and curing.
A more intensive reduction in particle size creates a large contact area and can contribute to a very cohesive structure. In coarse sausages, the producer still needs enough binding for the slice to stay together while retaining visible chunks.
The goal is not maximum binding; it is the right structure for the intended style.
Styles where grind size forms part of identity
Chorizo de Pamplona is traditionally associated with a fine grind made up of small defined particles. Other products, including some thick cular styles, may show much larger pieces.
The Chorizo de Cantimpalos specification even uses different grinder-plate ranges for certain formats, illustrating how grind size and diameter can be designed together.
These examples explain the principle; they do not mean that every fine or coarse chorizo must follow those specifications unless it belongs to the protected product.
Does coarse mean artisan?
No.
A rustic-looking cut may suggest tradition, but large manufacturers can make coarse-grind products and small producers can make very finely structured sausages.
Production scale should be judged from genuine information about the producer and method, not from particle size.
Does fine grinding hide poor meat?
You cannot conclude that from appearance alone.
Fine grinding makes individual pieces harder to identify visually, but it does not prove lower-quality raw material. The ingredient list, commercial category where applicable, producer information and production description are more useful evidence.
Choosing by texture preference
If you enjoy a bite where lean meat and fat remain clearly distinct, medium or coarse grinds may appeal to you.
If you prefer compact slices and a more even mouthfeel, fine-grind sausages may be more satisfying.
A real photograph of the cut surface and a good producer description are often the easiest way to anticipate that difference when shopping online.

Grind size builds the internal structure of a cured sausage. It changes what the slice looks like, how fat is distributed, how the product chews and can contribute to the way moisture moves during curing.
Fine does not mean industrial and coarse does not mean better. They are different technological and sensory choices. Quality depends on whether the chosen grind works with the raw material, diameter, recipe and maturation process.
