One may combine beans from several origins to create a balanced flavour. The other may contain a blend of natural-roasted and torrefacto coffee, with specific proportions shown on the pack. The distinction can confuse shoppers who know the intense traditional flavour of torrefacto but are unfamiliar with how it is produced.

The key point is that natural roast and torrefacto describe roasting processes, not coffee species. Arabica and robusta are botanical terms. Mixing different beans is not the same decision as adding sugar during roasting.

What does “natural roast” mean on a Spanish pack?

Naturally roasted coffee is made by exposing green coffee beans to heat, without the sugar addition that defines torrefacto. Roasting creates new aromas, colours and flavours. Natural coffee can be light, medium or dark. The word “natural” does not automatically mean mild, lightly roasted, organic or unprocessed.

Spain’s Royal Decree 1676/2012 on coffee quality distinguishes natural roast from torrefacto in its legal product definitions. The distinction matters because some consumers assume that natural roast is a certification or a claim about farming methods. Here it is simply a description of how the beans were roasted.

A well-made natural roast can allow you to recognise more of the coffee’s own character. A cup may remind you of chocolate or caramel and have a perception of sweetness even when no sugar was added during roasting. These are tasting impressions, not evidence of sweeteners in the beans.

What makes torrefacto different?

Torrefacto is roasted coffee to which sucrose or glucose syrup is added before the roasting process ends. Heat transforms the sugar, affecting the coating, appearance and sensory qualities of the beans. The finished coffee commonly has an intense roasted, bitter character that many people associate with strong traditional Spanish coffee.

Spanish legislation sets technical conditions for its manufacture, including limits on the amount of sugar that can be added. Torrefacto should not be described simply as “extra-dark coffee”. A dark natural roast and a torrefacto roast can look similar from a distance yet differ fundamentally in their production.

If you grew up drinking torrefacto, switching directly to a light natural roast may surprise you with brighter acidity and less charred flavour. Rather than giving up, try a natural medium or medium-dark roast with cocoa notes and compare the result using your normal brewer.

The two meanings of mezcla

On a regulated Spanish coffee label, a blend of natural roast and torrefacto must state the percentages of the two components. That information does not necessarily tell you how much arabica or robusta is present, or whether the beans come from one growing country or several.

A specialty roaster, however, may use mezcla or blend to describe a combination of origins or species whose beans have all been naturally roasted. That use of the term has a different meaning from the regulated designation for natural and torrefacto coffee. Read the complete product description rather than treating one word as a universal definition.

A label reading “70% natural roast / 30% torrefacto” is telling you about the roasting process. A description naming a Brazil-Colombia blend is telling you about origin. “100% arabica” concerns species and should not be confused with “100% natural roast”.

What works in different machines?

A moka pot can emphasise bitterness if the grind is too fine or the pot stays on the heat for too long. Combining that with a very bitter torrefacto roast can create a harsh cup. If you want something smoother, try a medium natural roast ground for moka and pay attention to the brewing process.

Bean-to-cup machines introduce a mechanical consideration. Some manufacturers advise against sugar-coated or caramelised beans and extremely oily roasts because deposits can cause problems for the grinder. Do not put torrefacto into a machine whose manual specifically forbids it. Manual espresso equipment offers more scope for experimenting with taste, provided you use it according to the maker’s instructions.

Making a choice you actually understand

If you want to explore the beans’ origin and flavour notes, natural roasting is a sensible starting point. If you enjoy the traditional taste of torrefacto, compare the stated blend proportions with a darker naturally roasted coffee. If what you want is a blend of different growing regions or coffee species, look for that information separately.

Also check whether the coffee is whole-bean or ground, which grind suits your brewer and the price per kilogram. Even excellent beans are a disappointing purchase when the grind is incompatible with your equipment. Our whole-bean versus ground coffee guide helps you make that part of the decision.

Natural roast, torrefacto and mezcla belong to different traditions and preferences. Learning how they are made does not require judging anyone’s tastes. It does let you recognise whether the intensity you enjoy comes mainly from the coffee itself, the roast level or sugar introduced during production. That knowledge makes the next purchase a much more deliberate choice. When looking through our specialty coffees, check the roast description rather than assuming any contain torrefacto.

In Spain, mezcla may mean a blend of natural roast and sugar-roasted coffee.
