The first names a cocoa-growing region and comes in a carefully designed paper sleeve. The second comes from a large manufacturer and costs considerably less. You might expect the first to be better before tasting either one. That expectation is exactly why a fair comparison is worth making.

Craft chocolate is not automatically superior to industrial chocolate. The terms point to differences in production scale and often to differences in sourcing or recipe flexibility. Whether a particular bar is good comes down to how well the cocoa has been handled, whether the recipe is balanced and how the chocolate feels and tastes.

Who actually makes the chocolate?

One distinction gets lost in marketing descriptions. A craft chocolatier may buy finished couverture and use it to create filled chocolates, truffles, sculpted pieces or flavoured bars. That work requires considerable skill: controlling temperature, designing fillings and handling shelf life are not trivial tasks. But it is not the same as making chocolate from raw cocoa beans.

A bean-to-bar maker generally takes control of the journey from the beans through roasting, winnowing, grinding and refining to the finished chocolate. This offers more opportunities to express a specific cocoa’s character. Yet large manufacturers can also start from beans, and small producers do not always make excellent chocolate. There is no useful shortcut from factory size to flavour quality.

When a brand calls something handmade, ask what part is handmade. A filled bonbon made with purchased chocolate may still be a wonderful artisan product. The important thing is accuracy, not attaching moral value to one production model.

Ingredient lists are a starting point, not a verdict

Plain dark chocolate often has a relatively short recipe: cocoa mass, sugar and sometimes additional cocoa butter. Vanilla or lecithin may also appear. Neither the presence of lecithin nor the absence of extra ingredients establishes quality on its own. Manufacturers choose formulations to achieve particular flow, texture and taste.

The cocoa percentage is similarly incomplete. A 75% bar includes ingredients derived from cocoa, but it doesn’t tell you the proportion of cocoa butter to non-fat cocoa solids or how the beans were fermented. Two bars with the same percentage can therefore feel strikingly different on the tongue.

If you want a meaningful comparison, put comparable products alongside each other. A plain 70% dark bar and a nut-filled confection are designed for different experiences. The same is true of a dark tasting bar and milk chocolate intended for a sweet, creamy finish.

Small batches and the promise of consistency

A small producer may adjust roasting and refining to suit a particular shipment of beans. That freedom can be exciting for anyone curious about seasonal variation and distinctive flavours. Larger producers often work hard to create a familiar result every time, blending cocoa or adjusting the process to keep a signature profile.

Neither goal is inherently wrong. Consistency matters when you buy chocolate for a regular baking recipe or simply want the taste you already know. Variability is interesting only when it produces a chocolate you enjoy. Rough texture or off-flavours don’t become strengths because a batch is small.

Traceability can offer another meaningful difference. Some labels give little more than a broad country of origin, while others specify a region, producer group or lot. Detailed information helps you understand what a claim about origin actually means. Still, a carefully made blend of cocoas can be every bit as deliberate as a single-origin bar.

A fair taste test you can try at home

Buy one craft and one industrial plain dark bar of similar cocoa percentages. Store both in the same conditions, then taste them at a comfortable room temperature. Break off small pieces and set the wrappers aside. Begin with texture: does the chocolate melt smoothly or seem waxy or gritty? Move on to flavour: is it primarily sweet, roasted, fruity, nutty or sharply acidic?

Finally, notice the aftertaste. A chocolate with a firm bitter note may be balanced and complex; another may feel harsh. More bitterness is not a reliable badge of quality. Nor does a glossy surface alone prove anything about the beans. Good tempering matters, but storage and temperature also influence appearance.

Price needs context too. A higher retail price may reflect cocoa purchasing practices, smaller runs, handwork, packaging or distribution costs. It does not guarantee a more satisfying bar for every palate. What matters is whether the extra information or sensory experience is worth something to you.

Choosing a bar for the occasion

If you want to explore cocoa origins, start with clearly described bean-to-bar products. For example, Chocolates Artesanos Isabel describes a 75% Peruvian bar, identifying Piura as its origin and providing ingredients and tasting notes. Such detail makes the claim assessable; it doesn’t predetermine your personal preference.

For an everyday cake, a dependable industrial baking chocolate might be the easier choice. For an evening of tasting different origins, smaller-batch chocolates offer a different kind of experience. The sensible question isn’t which category wins, but which characteristics you want to pay attention to.

And if your blind tasting surprises you, that’s a success. It means you have begun choosing chocolate with your senses rather than the expectations printed on its sleeve.

Editorial reference sources

Cacao of Excellence: flavour and quality evaluation.

EU Directive 2000/36/EC on cocoa and chocolate products.

Chocolates Artesanos Isabel: Peru 75% bean-to-bar bar.

Craft and industrial describe approaches to production, not guaranteed quality grades.
