Those details may be valuable, but none is a shortcut to telling whether the chocolate inside is any good.

Choosing great craft chocolate starts with the information on the pack and finishes with the experience of eating it. Look at the ingredients, find out what the maker does with the cocoa and then pay attention to texture, flavour and balance. A carefully made 70% bar may be more enjoyable—and more interesting—than an unremarkable 90% one.

Start at the back of the wrapper

A straightforward dark chocolate recipe often contains cocoa mass, sugar and sometimes extra cocoa butter. Vanilla, salt or an emulsifier such as lecithin may also appear. Their presence doesn’t automatically signal poor chocolate: the whole formulation matters, as does what the maker intends the bar to taste and feel like.

Ingredients are generally listed by weight, from most to least. It also helps to distinguish a plain tasting bar from a chocolate designed around additions. Pistachios, coffee, candied fruit or spices can make something delicious, but they change the experience and may introduce allergens.

Be curious when the front of the wrapper is full of words such as premium and artisan but offers almost no account of who makes the chocolate, where the cocoa comes from or what the claims mean. Complexity isn’t the enemy. Vague information is simply less useful when making a choice.

Origin tells a story—not the whole story

Cocoa can taste fruity, floral, nutty, earthy or distinctly roasted. Variety and growing conditions play a role, as do fermentation and drying before the beans reach the chocolate maker. Roasting and the later production stages influence the final flavour again. Two bars made with cocoa from the same country may taste markedly different.

“Peruvian cocoa” is meaningful, but Peru contains different cocoa-growing regions. Where available, a region, producer group or verified cocoa variety gives the label more depth. Equally, a blend of cocoa origins is not inherently inferior to single-origin chocolate. A skilled maker might blend beans to achieve a specific balance or a dependable flavour from batch to batch.

Consider Chocolates Artesanos Isabel’s 75% Peru Bean-to-Bar bar. Its product information identifies cocoa from Piura, a gentle roast and tasting notes of citrus and caramel. These are the maker’s tasting descriptions, not flavours every person is guaranteed to detect. They give you something interesting to look for when you taste the bar.

What does ‘craft’ actually tell you?

A smaller producer may have the freedom to adjust the roast for an individual lot, work with clearly identified beans or make smaller recipe changes. Yet small-scale production is not proof of quality by itself. The decisions and execution behind the chocolate matter more than the romance of a workshop photograph.

There is another distinction worth knowing. A bean-to-bar maker turns cocoa beans into finished chocolate. A chocolatier can also work expertly with chocolate made by someone else, shaping it into filled bonbons or more elaborate confectionery. Both practices can be genuinely artisanal. They are simply different skills, and a transparent producer should be able to tell you which work they do.

If the production method interests you, look for an explanation of sourcing, roasting, separating the nib from the husk, grinding, refining and tempering. Those details are more informative than a generic promise of traditional craftsmanship.

Taste two bars together

A useful tasting doesn’t require special equipment. Choose two bars with reasonably similar cocoa percentages, let them come to a comfortable tasting temperature and set aside strongly flavoured drinks for a few minutes.

Look at the surface, then break off a piece. A properly tempered bar will generally have an even appearance and some snap, although temperature, thickness and recipe affect both. Smell it briefly. You might notice roasted cocoa, dried fruit or a pleasant, clean aroma. There is no need to invent a long list of tasting notes.

Now let a piece melt rather than chewing straight through it. Does it feel smooth or gritty? Is the first impression sweetness, acidity or bitterness? Does anything new appear as it melts? A good bar can be intense without becoming one-dimensional. The finish—the flavour left after the chocolate has gone—can tell you as much as the first bite.

Storage influences all of this. Heat, humidity and nearby odours can damage the experience, even when the chocolate was originally well made. A sound wrapper and the manufacturer’s storage advice deserve attention.

Organic, Fairtrade and free-from are separate questions

Organic and fair-trade certifications describe different sets of production and trading criteria. They are not flavour ratings, and neither replaces a careful look at ingredients. Where a producer makes a certification claim, it should be possible to identify the relevant scheme. Chocolates Artesanos Isabel, for instance, lists CAAE organic certification and Fairtrade certification on certain product pages.

Nor should you infer “dairy-free”, “gluten-free” or “vegan” from a high cocoa percentage. Ingredients and possible cross-contact depend on the individual product and facility. Anyone buying for an allergy should check the current label of that exact bar, rather than making assumptions from its appearance or category.

Match the bar to the occasion

Someone new to dark chocolate might enjoy comparing two moderately intense bars: one from a stated origin and another blended for balance. A person who loves a powerful cocoa taste may prefer a higher percentage, but the number is a preference cue rather than a quality score.

For a gift, a thoughtfully varied selection often reveals more about the recipient’s tastes than one very bitter bar chosen as a test of sophistication. And if you need chocolate for baking, the decision changes again: melting behaviour, cocoa-butter content and format can matter just as much as flavour.

In the end, the most persuasive quality signal is being able to describe what you enjoy about a bar: its aroma, its texture, its balance or an unexpected pairing. Learning to read the label simply helps you get there more often.

Editorial reference sources

Cacao of Excellence: cocoa quality and flavour evaluation.

Valrhona: what the cocoa percentage does—and doesn’t—mean.

Chocolates Artesanos Isabel: Peru 75% Bean-to-Bar chocolate.

A high cocoa percentage doesn’t automatically make a bar better.
