That creates an obvious question: what is the difference between Japanese and European Wagyu? The answer is not that one is simply “real” and the other is not. They can share genetic ancestry while coming from different production systems, traceability frameworks and grading methods.

The useful starting point is to separate Wagyu genetics from Japanese Wagyu produced in Japan. A European farm may raise Fullblood, Purebred or Crossbred Wagyu and produce outstanding beef. That does not automatically make the meat Japanese Wagyu or give it a Japanese A5 grade.

Country of production is the first difference

Official Japanese sources distinguish Wagyu produced in Japan from Wagyu genetics raised overseas. For buyers, country of origin therefore needs to be considered separately from breed or genetic percentage.

If the beef is produced in Spain, France, the United Kingdom or elsewhere in Europe, it should be evaluated as a European product with its own production story. It can be exceptionally marbled without being the same proposition as cattle born and raised in Japan.

European Wagyu genetics vary widely

“European Wagyu” is not one uniform category. Some farms work with registered Fullblood cattle linked to Japanese founder lines. Others use high-percentage Purebred animals or Crossbreds, often with Angus or another locally suitable breed.

Two European products labelled Wagyu can therefore be very different. Ask which genetics and registry support the claim. See our guide to Fullblood, Purebred and Crossbred Wagyu.

A5 is not a generic word for heavy marbling

A5 belongs to Japan’s carcass grading system, combining yield grade A with quality grade 5. It should not be treated as a universal translation for any heavily marbled Wagyu produced outside Japan.

European beef may use other marbling scales, producer scores or international systems. Always identify the scale before comparing a number directly with Japanese BMS.

Both can develop substantial marbling

Overseas production does not prevent Wagyu genetics from producing high levels of intramuscular fat. Genetics, feeding and finishing can create remarkable marbling.

But visually similar marbling does not mean identical beef. Diet, climate, finishing period, cut, ageing and fat composition can all change the eating experience.

Japan has national individual cattle identification

Japanese beef traceability is a major part of the product’s identity. Individual cattle carry identification numbers that connect the meat to official production records.

European cattle are also subject to identification and traceability rules, but the commercial documentation is not the same Japanese system. A seller should be able to explain clearly where the beef was produced and what evidence supports the claim.

Does European Wagyu taste different?

It can, but there is no single European Wagyu flavour. Fullblood beef finished for a long period can differ dramatically from an F1 cross with lower marbling. Japanese Wagyu itself also varies by animal, brand and cut.

Some overseas Wagyu programmes aim for a more Western steak balance: larger servings, more obvious muscle structure and less extreme fat than very highly marbled Japanese A5. That is a tendency, not a universal rule.

Ageing can change the comparison

European premium beef is often marketed with extended ageing, while highly graded Japanese Wagyu is particularly defined by marbling and fat quality. Strong dry-ageing character can therefore create a very different flavour profile.

See Wagyu vs aged beef to understand why genetics and ageing are separate variables.

Which is more expensive?

Highly graded Japanese Wagyu often carries costs from long production, selection, limited supply, certification, export and international cold-chain logistics. European production avoids part of that route, but prices still vary widely by genetics, farm, cut and marbling.

Price per kilogram is not the only useful comparison because extremely rich Japanese Wagyu is often served in much smaller portions.

What should a transparent product page show?

Look for country of origin, cut, weight, fresh or frozen status, genetics where relevant, grading system if a score is claimed, and storage instructions. With Japanese Wagyu, official grade, BMS when available and traceability provide additional context.

The conclusion

Japanese and European Wagyu can share genetics without being the same commercial or production category. Japan has its own recognised breeds, grading and traceability system. European Wagyu covers a wide range of producers, genetic percentages and production methods.

Compare origin, genetics, marbling, cut, ageing, grading and cost per serving rather than treating the word Wagyu as if it erased every difference.

Frequently asked questions

Is Wagyu raised in Europe?

Yes. European farms raise Fullblood, Purebred and Crossbred cattle with Wagyu genetics.

Can European Wagyu be A5?

A5 is a Japanese carcass grade. European beef can be highly marbled, but a local score should not automatically be treated as Japanese A5.

Is European Wagyu fake?

No. It can legitimately come from Wagyu genetics. The key is not confusing Wagyu genetics raised in Europe with beef produced in Japan.

Which is better?

That depends on the experience you want. Japanese origin matters if you specifically want Japanese Wagyu; European Wagyu can offer a different and equally interesting interpretation of the genetics.

Wagyu raised in Europe can be excellent, but it is not the same product as Wagyu produced in Japan.
