Today Wagyu<\/strong> evokes highly marbled A5, Kobe Beef, luxury restaurants and extraordinary prices. Its story, however, began long before marbling became a gastronomic obsession. For centuries Japanese cattle were primarily working animals used for agriculture and transport, particularly in mountainous regions where endurance mattered more than producing a large steak.<\/p>\n

Modern Wagyu is the result of a long transformation. Japan moved from limited beef consumption to a modern cattle industry, introduced foreign breeds, experimented with crossbreeding and then consolidated populations through closed breeding and selection.<\/p>\n

Once populations were established, improvement increasingly relied on selecting breeding animals capable of transmitting desirable characteristics. Pedigrees allowed families to be tracked and progeny performance compared.<\/p>\n

Tajima cattle from Hyogo are one of the most famous populations within Japanese Black and form the genetic basis of Kobe Beef. Tajima and Kobe are not automatically the same thing, however; Kobe is a certified regional brand with additional production and quality rules.<\/p>\n

As overseas Wagyu became common, Japan needed a way to distinguish its own production. A unified logo was introduced in 2007, now known internationally as the Universal Wagyu Mark.<\/p>\n
