Kobe is not a breed; Miyazaki is a prefecture as well as the name behind a beef programme; Tajima is a Japanese Black population associated with Hyogo; and Matsusaka is a brand with its own production requirements.

Japan has hundreds of regional Wagyu brands. You do not need to memorise them all, but understanding the major names makes product descriptions much easier to interpret.

Region is not the same as grade

A regional brand and A5 answer different questions. A5 describes carcass grading. A regional programme defines origin and its own production conditions. Products from different regions can both be A5.

Hyogo: Tajima and Kobe Beef

Hyogo is central to Wagyu history. Tajima cattle, a Japanese Black population, underpin several famous brands. Kobe Beef is the best-known international name associated with Hyogo, but not every piece of beef from the prefecture qualifies as Kobe.

Mie: Matsusaka Beef

Mie is home to Matsusaka Beef, one of Japan’s historic prestige brands. Its programme is associated with Japanese Black females raised under defined conditions in the designated area.

Shiga: Omi Beef

Omi Beef from Shiga has a long history in Japanese beef culture and is often mentioned alongside Kobe and Matsusaka. Its value lies not in a simple ranking but in a defined regional identity.

Miyazaki: a major Japanese Black producer

Miyazaki in Kyushu is an important Japanese Black producing prefecture. Miyazakigyu has strong recognition at home and abroad. “Miyazaki” identifies origin/programme; “A5” identifies carcass grade.

Kagoshima: scale and prestige in Kyushu

Kagoshima is another major cattle-producing area and Kagoshima Wagyu appears frequently in premium export markets. Comparing it with Miyazaki or Kobe only makes sense when grade, BMS and cut are also considered.

Gifu: Hida Beef

Hida Beef from Gifu is a well-known Japanese Black regional brand. It demonstrates that a beef does not need the Kobe name to represent established regional production and high standards.

Yamagata: Yonezawa Beef

Yonezawa Beef comes from Yamagata in northern Honshu and has a strong reputation for carefully produced, richly marbled beef.

Iwate and northern Japan

Iwate offers both Japanese Black brands such as Maesawa and production of Japanese Shorthorn, a much leaner Wagyu breed with a more meat-forward profile.

Kumamoto and Kochi: Japanese Brown

Japanese Brown, or Akaushi, is particularly associated with Kumamoto and Kochi. It generally offers a different lean-to-fat balance from Japanese Black.

Yamaguchi: Japanese Polled

Japanese Polled is a very rare Wagyu breed associated particularly with Yamaguchi. Its existence is a reminder that Wagyu extends far beyond highly marbled Japanese Black.

Restaurant location is not beef origin

A Tokyo or Osaka restaurant can serve Kobe, Miyazaki, Hida or many other brands. The location of the retailer or restaurant should never be confused with the cattle’s origin.

How regional brands work

Each organisation defines its own conditions, which may cover geographic area, breed, rearing period, authorised producers, sex and minimum quality grade. Definitions therefore need to be checked brand by brand.

Which is better: Kobe, Miyazaki or Kagoshima?

There is no universal answer. Cut, grade, BMS, format and personal taste can matter more than brand fame. See our Kobe, Miyazaki and Kagoshima comparison.

Using origin to buy better

Confirm Japanese origin first. Then identify the prefecture or regional brand and understand its rules. Finally compare grade, BMS, cut, weight, storage and price.

The conclusion

Japan does not produce one single Wagyu style but a huge range of regional brands built on different breeds, bloodlines, environments and standards. Hyogo/Kobe, Mie/Matsusaka, Shiga/Omi, Miyazaki, Kagoshima, Gifu/Hida and Yamagata/Yonezawa are major reference points, but only part of the map.

Frequently asked questions

Is Kobe a region or breed?

Kobe Beef is a regional brand connected to Hyogo and Tajima cattle, not a separate breed.

Are Miyazaki and Kagoshima Wagyu?

They are prefectures with major Wagyu programmes, primarily Japanese Black.

Which three names are often cited as historic prestige brands?

Kobe, Matsusaka and Omi are frequently grouped together.

Does region alone determine quality?

No. Grade, BMS, cut, producer and traceability also matter.

Kobe, Matsusaka, Omi, Miyazaki, Kagoshima, Hida and Yonezawa are not interchangeable names.
