Dry pulses do not move straight from the plant into a retail bag. After harvest, they pass through a chain of operations designed to remove plant fragments, soil, stones, foreign seeds, broken grains and pieces that do not meet the target standard.<\/p>\n

That work explains why two bags of the same species can look very different. More precise grading creates a more uniform lot, but it also requires equipment, time and produces rejects.<\/p>\n

Understanding the process makes terms such as cleaned, selected and graded much easier to interpret and shows why the final appearance depends on more than the crop itself.<\/p>\n

Harvested material contains more than edible seed<\/h2>\n

Harvesting can bring in pods, stems, dust, small stones and weed seeds. Even well-adjusted machinery produces an agricultural material that still needs conditioning before it is sold as food.<\/p>\n

The first job of a cleaning plant is to separate materials using physical properties such as size, weight, shape and response to airflow or screens.<\/p>\n

The process does not manufacture a better bean or chickpea. It separates usable seed from material that should not reach the consumer.<\/p>\n

Pre-cleaning removes the obvious material<\/h2>\n

Early stages commonly use screens, aspiration and other mechanical systems to remove large and fine impurities before more precise sorting.<\/p>\n

Removing stones and heavy foreign material also protects downstream equipment.<\/p>\n

Small and large plants may use different machines, but the general strategy is the same: separation becomes progressively more precise.<\/p>\n

Screening and grading by size<\/h2>\n

Screens with defined openings separate seeds by dimension. For chickpeas and beans, calibre can be a visible commercial characteristic; lentil diameter also varies significantly by type.<\/p>\n

Grading does not mean every grain must be identical. It reduces variation and creates lots within a defined range.<\/p>\n

Some PDO and PGI specifications include size measurements or hundred-seed weight, turning calibre into a controlled parameter for that particular protected product.<\/p>\n

Separation by density and weight<\/h2>\n

Two seeds with similar dimensions can have different weights. Gravity tables and air-based systems can separate poorly filled grains, light debris and material with different density.<\/p>\n

This improves lot uniformity without altering the seed itself.<\/p>\n

A poorly filled grain may hydrate and cook differently, so physical grading can indirectly improve consistency in the kitchen.<\/p>\n

Optical sorting: colour and visible defects<\/h2>\n

Modern plants may use cameras and sensors to detect unusual colours, stains, foreign seeds or material that passed earlier mechanical stages.<\/p>\n

Optical sorters work quickly and eject pieces that fall outside programmed parameters. They complement rather than replace screens and density separation.<\/p>\n

Smaller producers may also use manual inspection. The technological level changes, but the objective is similar.<\/p>\n

Why some grains are broken<\/h2>\n

Breakage can occur during harvesting, transport, drying and handling. Very dry seed can be more brittle, while poorly adjusted equipment can increase damage.<\/p>\n

A small proportion of broken seed may be tolerated by a commercial specification, but excessive fragments reduce uniformity and can release more starch during cooking.<\/p>\n

That is why a heavily broken lot does not behave like carefully conditioned whole seed.<\/p>\n

Drying and moisture control<\/h2>\n

Pulses need appropriate moisture conditions for storage. Excess moisture encourages deterioration, whereas excessively aggressive drying can damage seed integrity.<\/p>\n

Some protected product specifications set moisture or conditioning requirements.<\/p>\n

After drying, storage has to prevent rewetting, condensation and excessive heat.<\/p>\n

Are dry pulses washed before packing?<\/h2>\n

Dry-pulse conditioning does not necessarily involve washing with water. Many operations rely on dry cleaning so that moisture is not reintroduced and then removed again.<\/p>\n

Consumers can still rinse pulses before soaking or cooking to remove surface dust.<\/p>\n

Where the pack provides specific preparation instructions, those should be followed.<\/p>\n

Packing and traceability<\/h2>\n

Once the lot is cleaned and classified, it is packed and identified. Traceability links the bag to a lot, campaign and, depending on the system, a producer or growing area.<\/p>\n

Protected geographical schemes add specific records and controls before the protected name can be used.<\/p>\n

Packaging is therefore not just a container. It protects against moisture, contamination and insects while carrying the information needed to identify the lot.<\/p>\n

What a shopper can see<\/h2>\n

A well-selected lot usually shows reasonable uniformity of type, colour and size, few broken grains and no visible foreign material. Absolute visual perfection is not required.<\/p>\n

Traditional varieties can show natural variation, and eliminating every difference can mean discarding perfectly good food.<\/p>\n

Visual quality is best interpreted together with variety, origin, crop freshness and, most importantly, cooking performance.<\/p>\n

Bottom line<\/h2>\n

Between field and bag, dry pulses are cleaned, screened, graded, separated by density, sorted and conditioned. These stages do not change the variety, but they strongly affect how much foreign material, breakage and variability reaches the consumer.<\/p>\n

Good grading supports more consistent cooking and confidence in the product, but it cannot replace good raw material. Final quality still depends on cultivation, harvest, storage and conditioning working together.<\/p>\n
