Useful rind flora can be contamination if it appears in a fresh cheese that should remain plain.<\/p>\n<h2>Penicillium in blue cheese<\/h2>\n<p>In Cabrales, Pic\u00f3n, Valde\u00f3n and other blues, Penicillium grows in air channels inside the paste. Piercing provides oxygen and allows veining. These moulds break down proteins and fats, creating characteristic texture and aroma.<\/p>\n<p>Blue or green veins in this context are not spoilage. The same growth on an unrelated fresh cheese would mean something very different.<\/p>\n<h2>Bloomy rinds work from the outside<\/h2>\n<p>Brie- and Camembert-type cheeses are colonised by white surface mould. The flora consumes acids and releases enzymes that move inward, softening paste beneath the rind. Geotrichum may also help establish the surface.<\/p>\n<p>A uniform expected white rind differs from isolated unexpected colours. Pattern, aroma and product information help distinguish normal development from contamination.<\/p>\n<h2>Yeasts in washed and natural rinds<\/h2>\n<p>Many cheese yeasts tolerate salt and consume lactate, raising surface pH and helping rind bacteria establish. This succession contributes to the strong aromas of washed-rind cheese.<\/p>\n<p>Yeasts can also cause gas, discolouration and off-flavours when unwanted. Their role depends on species, amount and ecosystem.<\/p>\n<h2>How accidental mould arrives<\/h2>\n<p>Mould spores are common in the environment and may reach cheese during cutting, storage or handling. Exposed surfaces, condensation and damaged packaging give them opportunities to grow.<\/p>\n<p>Good hygiene, suitable wrapping and refrigeration reduce unwanted growth while still allowing intentionally living rinds to function.<\/p>\n<h2>What to do with unexpected mould<\/h2>\n<p>The answer depends on cheese type. Food-safety guidance may allow a generous trim around mould on hard cheese because penetration is limited, while soft, shredded and high-moisture cheeses generally require a more cautious response.<\/p>\n<p>These rules do not apply to mould deliberately forming blue veins or a bloomy rind.<\/p>\n<h2>Strong aroma is not automatically spoilage<\/h2>\n<p>Washed rinds, blues and very mature cheeses can generate sulphur compounds, ammonia and fatty acids with powerful odours.
