Milk proteins and salts buffer pH changes, so samples with different titratable acidity can still have fairly similar pH values.<\/p>\n<p>For process control pH is often more informative because it directly affects protein functionality and microbial conditions. Titratable acidity remains useful, but it answers a different question.<\/p>\n<h2>How acidification begins<\/h2>\n<p>Starter cultures convert lactose to lactic acid. The progressive drop in pH assists coagulation and later affects whey expulsion. If acid develops too quickly or too slowly, curd can retain a different balance of moisture and minerals from the target.<\/p>\n<p>Cheesemakers therefore follow a pH profile rather than waiting for one final value: cutting, draining, moulding, salting and early curing are all informative checkpoints.<\/p>\n<h2>pH, calcium and paste structure<\/h2>\n<p>Acidification solubilises some calcium phosphate associated with casein. At key stages, a more acidic curd retains less mineral and develops different elasticity, melt and fracture behaviour from a more mineralised curd.<\/p>\n<p>This is why draining pH matters so much. Final texture is not determined only by pressure or water content; the mineral chemistry of the curd has already been shaped before maturation begins.<\/p>\n<h2>Microbial growth and pH<\/h2>\n<p>Microorganisms have preferred pH ranges. Early acidification helps suppress many contaminants and works with salt, water activity and temperature as part of cheese safety. A low pH alone does not make a product automatically safe or replace hygiene.<\/p>\n<p>During ripening, some yeasts and moulds consume lactate or create alkaline compounds at the surface, raising local pH and allowing other rind bacteria to grow.<\/p>\n<h2>pH can rise again during ripening<\/h2>\n<p>In internally ripened cheese, pH may stabilise and later rise gradually as protein breakdown creates alkaline products. In bloomy-rind cheese the effect can be dramatic at the surface while the centre remains more acidic.<\/p>\n<p>That gradient helps explain why a soft-ripened cheese can be creamy below the rind but firm at the core. A pH number should always be interpreted with sampling location in mind.<\/p>\n<h2>Perceived acidity is not simply pH<\/h2>\n<p>The palate integrates acids, salt, fat, aroma and texture. Fat can soften the perception of sharpness, and different organic acids have different sensory effects. Serving temperature also matters.<\/p>\n<p>Cheeses should therefore not be ranked by pH as if the number were a direct sourness score. pH is a process and stability variable, not a complete sensory description.<\/p>\n<h2>Why this matters to buyers<\/h2>\n<p>Consumers do not need a pH meter, but understanding pH clarifies why lactic-set cheese is fragile, why pasta filata needs a narrow acidification window and why bloomy-rind cheeses ripen from the outside inward.<\/p>\n<p>It also prevents simplistic claims such as lower pH equals higher quality. Each style needs the pH profile appropriate to its own technology.<\/p>\n<h2>Related questions<\/h2>\n<h3>Does lower pH always mean safer cheese?<\/h3>\n<p>It can inhibit some organisms, but safety also depends on water activity, salt, temperature, hygiene and the organism involved.
