Affinage is the work of guiding those changes through temperature, humidity, turning, washing, brushing and choosing the release point. One cheese may mature in a package with little external intervention while another needs frequent surface management. Keeping the terms separate prevents the assumption that ageing always requires the same craft technique.<\/p>\n<p>Age also differs from degree of development. A small moist cheese may change dramatically in weeks, while a large dry wheel can require months before reactions progress deeply through the centre.<\/p>\n<h2>Proteolysis and the changing protein network<\/h2>\n<p>Casein forms much of the structural skeleton of cheese. During ripening, enzymes from rennet, milk and microorganisms break proteins into progressively smaller fragments. This usually reduces elasticity and firmness, can improve melting in some styles, and creates peptides and amino acids that later become flavour compounds.<\/p>\n<p>Proteolysis does not make every cheese soft. Its effect depends on moisture, pH, salt, calcium and initial structure. In a bloomy-rind cheese it can be intense near the surface and create a creamy layer moving inward; in a hard cheese the effect is slower and more uniform.<\/p>\n<h2>Lipolysis: fat is transformed too<\/h2>\n<p>Fat contributes body and richness, but during maturation it can also be broken down by lipases. Free fatty acids and their derivatives can be powerful aroma compounds. This pathway matters greatly in some blue cheeses and in certain goat-milk styles.<\/p>\n<p>More lipolysis is not automatically better. Excessive or unbalanced fat breakdown can produce rancid, soapy or harsh notes. Good ripening is about balance between pathways rather than maximising one biochemical reaction.<\/p>\n<h2>Lactose, lactate and citrate<\/h2>\n<p>Much of the lactose leaves with whey or is fermented early, so mature cheese contains far less residual milk sugar than the original milk. Starter bacteria convert lactose into lactic acid and establish a pH that influences structure, safety and enzyme activity. Later, depending on style, other organisms may consume lactate or metabolise citrate.<\/p>\n<p>These pathways can produce carbon dioxide, diacetyl and other compounds. Gas may help create small eyes in one cheese and be a defect in another. The meaning of a reaction always depends on the intended style.<\/p>\n<h2>Temperature, humidity, salt and pH set the pace<\/h2>\n<p>Higher curing temperature generally speeds many reactions, but it can also increase the risk of over-ripening and defects. High environmental humidity limits surface drying and supports particular rind organisms, while excessive dryness can form a hard rind before the centre develops correctly. Salt and pH further regulate enzymes and microorganisms.<\/p>\n<p>A ripening room is therefore not simply a refrigerator. Its job is to balance moisture loss, surface growth and internal transformation so that the cheese develops in a controlled way.<\/p>\n<h2>Texture and flavour do not evolve at the same rate<\/h2>\n<p>Structural changes can become obvious before flavour seems intense: paste may lose elasticity, become brittle or soften. Complex aroma compounds can take longer to accumulate. In surface-ripened cheeses the reverse can also happen, with an aromatic rind surrounding a firmer, less developed centre.<\/p>\n<p>Ripening is not one straight line from mild to strong. Several reactions run at once, and each has its own speed.<\/p>\n<h2>How to interpret age when buying cheese<\/h2>\n<p>Age is useful only when read with moisture, size, technology and rind. Sixty days may be substantial for a small moist cheese and merely a starting point for a large hard wheel. Product descriptions are more informative when they combine maturation time with milk, style, rind and format.<\/p>\n<p>Do not treat a large number of months as an automatic quality score. The right maturity is the point where texture, aroma, salt, acidity and persistence are balanced for that particular cheese.<\/p>\n<h2>Related questions<\/h2>\n<h3>Does cheese keep ripening after it is cut?<\/h3>\n<p>Yes, although cutting changes the environment. Enzymatic reactions continue, while the exposed surface loses moisture and the balance differs from that of a whole wheel.<\/p>\n<h3>Does more time always mean more flavour?<\/h3>\n<p>No. Some notes intensify while others fade, and excessive ageing can bring dryness, bitterness or over-ripeness.
