Soluble proteins can be concentrated into protein ingredients, lactose can be recovered, and the liquid can be used in drinks, fermentations and other foods. Whey and cheese yield<\/h2>\n<p>The balance between curd and whey helps explain yield. High-moisture cheese retains more water and therefore gives more product weight; hard cheese expels more liquid and yields fewer kilograms. Good yield, however, does not mean trapping whey indiscriminately.<\/p>\n<p>Dairies monitor milk, whey and cheese composition to hit the intended product target while avoiding valuable solid losses. Whey is an inevitable process stream, not evidence of failure.<\/p>\n<h2>7. Why sweet whey can still contain lactose<\/h2>\n<p>Rennet coagulation traps mainly casein and fat rather than dissolved lactose. Much of that lactose remains in the aqueous phase and leaves with whey. This is why whey is an important raw material for lactose recovery and why derived ingredients may need further separation steps.<\/p>\n<p>It also clarifies a common confusion: a matured cheese can end up low in lactose not because all lactose disappeared inside the wheel.
