Moisture falls with time, firmness increases and flavours become more concentrated.<\/p>\n<p>Not every Spanish sheep cheese is Manchego, and not every sheep cheese made in Castilla-La Mancha belongs to the PDO. The protected name requires the defined breed, territory, method and certification.<\/p>\n<h2>Idiazabal and Roncal: northern sheep cheeses<\/h2>\n<p>Idiazabal and Roncal represent another tradition. Idiazabal requires raw Latxa or Carranzana sheep milk and can be smoked or unsmoked. Roncal has its own Navarrese PDO and a firm matured identity. Non-protected cheese can be excellent, but protected names cannot be borrowed.<\/p>\n<h2>Choose by texture rather than stereotype<\/h2>\n<p>For shaving, transport and a drier cut surface, a firm matured cheese may be practical. For spooning or making the centrepiece of a board, a torta is a completely different experience. Young sheep cheese can be relatively mild while aged cheese may be highly persistent.
