Producers select strains or blends around target pH, temperature, time, texture and flavour.<\/p>\n<h2>Raw milk, pasteurised milk and microbiota<\/h2>\n<p>Raw milk contains a more complex initial microbiota, but raw-milk cheese is not necessarily made without added starters. Many producers still use cultures to guide acidification. Their presence alone, however, does not justify calling a cheese \u201clactose-free\u201d.
