What is distinctive is that milk from different species is not mixed in one cheese. Appearance, however, is not proof of protection. Mountain imagery or words such as \u201ctraditional\u201d cannot replace traceability. This is a useful rule for any geographically named cheese: protected origin is demonstrated through certification, not visual storytelling.<\/p>\n<h2>Choosing cow, sheep or goat Los Beyos<\/h2>\n<p>Cow milk is often a logical entry point for someone seeking a gentler expression, while sheep and goat versions can provide more pronounced profiles. Milk species should not be treated as a quality ranking, however. It is one variable among producer skill, ripening and condition.<\/p>\n<p>The small format also makes the cheese practical for a board where a whole or half wheel can be shown.
