The key mistake is not choosing the wrong one for a recipe; it is treating fresh sausage as though it were a ready-to-eat cured product.<\/p>\n<p>The practical rule is simple: <strong>fresh chorizo is raw and must be cooked; cured chorizo has undergone maturation and drying and, when the producer sells it as ready to eat, can be eaten without cooking<\/strong>. The instructions on the particular product always take priority.<\/p>\n<h2>What is fresh chorizo?<\/h2>\n<p>Fresh chorizo is made from minced meat and fat mixed with seasonings and filled into a casing, without completing the drying process that would turn it into a dry-cured sausage. It retains much more moisture, feels soft and behaves in the kitchen much like seasoned raw minced meat inside a casing.<\/p>\n<p>It is therefore normally refrigerated and intended for the grill, pan, oven, stews or for removing from the casing and crumbling. Some cured sausages remain tender and some fresh sausages are tightly filled. Labelling and producer information are more dependable than squeezing the sausage.<\/p>\n<h2>Can fresh chorizo be eaten raw?<\/h2>\n<p>It should not be treated as a ready-to-eat cured sausage. It is raw meat and requires adequate cooking. With thick sausages, moderate heat is often better than fierce heat because it allows the centre to cook before the outside burns.<\/p>\n<p>Repeatedly piercing the casing to \u201clet the fat out\u201d is unnecessary and can make the sausage lose juices. Cook it evenly and follow any specific producer instructions.<\/p>\n<h2>Can cured chorizo be cooked?<\/h2>\n<p>Yes. Ready-to-eat does not mean heat will ruin it. Cured chorizo can add paprika, fat and savoury depth to beans, chickpeas, rice, eggs and stews. Because it already starts dry and concentrated, however, very long cooking can make it tough or release more fat than intended.<\/p>\n<p>If a recipe calls for fresh chorizo and you substitute cured chorizo, expect less moisture, more concentrated seasoning and a different texture.<\/p>\n<h2>Storage is different too<\/h2>\n<p>Fresh chorizo needs refrigeration and its use-by date and storage instructions should be followed closely. Once opened, handle it as other raw meat: minimise time outside the fridge, avoid cross-contamination and cook it within the stated period.<\/p>\n<p>Cured chorizo contains less available moisture and often keeps longer, but there is no universal storage time.
