Cut open a pepper and you may find seeds that are no longer cream or pale yellow but brown, grey or black. The sight can be alarming because the seeds sit inside a protected cavity, yet seed colour alone cannot tell you whether the pepper is spoiled<\/strong>.<\/p>\n

Seeds may darken because of advanced maturity, dehydration, ageing, internal damage or microbial growth. To interpret them properly, also examine the placenta\u2014the white tissue holding the seeds\u2014the pepper flesh, smell and texture.<\/p>\n

What pepper seeds normally look like<\/h2>\n

Fresh pepper seeds are generally pale, flat and dry or slightly flexible. As the fruit ages and loses moisture, some seeds can become darker even when the surrounding tissue is not rotten.<\/p>\n

Variety and maturity also matter. A fully ripe pepper can have a different internal appearance from a fruit harvested while green.<\/p>\n

When dark seeds may simply reflect ageing<\/h2>\n

If only a few seeds are brown or blackish, they are dry, there is no fuzzy growth and the pepper interior remains firm and clean with a normal vegetal smell, the change may be linked to fruit age or uneven seed development.<\/p>\n

In that situation, remove the seeds and assess the flesh. The part normally eaten is the fleshy wall of the pepper rather than the seed cavity.<\/p>\n

When black seeds are more concerning<\/h2>\n

The situation is different if dark seeds sit in wet, slimy, brown or collapsed tissue; visible mould is present; the cavity smells sour or fermented; or the surrounding flesh has become soft and degraded.<\/p>\n

Those are not simply dark seeds. They are signs of internal deterioration, and trimming a tiny patch is not a sensible way to rescue the fruit.<\/p>\n

Internal mould is not always visible outside<\/h2>\n

A pepper can retain an acceptable-looking skin while deterioration develops around the seed cavity. Microorganisms may enter through tiny cracks, the stem area or internal damage that is not obvious from the outside.<\/p>\n

That is why smell and texture matter so much after cutting. A dry, clean cavity is very different from visible fungal growth, abnormal liquid or broken-down tissue.<\/p>\n

Can you remove the seeds and eat the rest?<\/h2>\n

If the only finding is a few dry dark seeds and all the flesh is firm, without mould or abnormal smell, removing the seeds and placenta is usually enough from a quality perspective.<\/p>\n

If mould or rot is present inside, do not treat the pepper as though scraping out the seeds solves the problem. The hollow, moist structure makes it difficult to know how far deterioration has progressed.<\/p>\n

Dark seeds in very ripe peppers<\/h2>\n

Peppers left longer on the plant or in storage may show ageing seeds before the outer wall completely loses its appearance. Wrinkling and some softening may also develop.<\/p>\n

This connects with another common question: a wrinkled or slightly soft pepper<\/a> may simply have lost water rather than rotted. Quality loss and spoilage are not the same thing.<\/p>\n

Outer colour does not predict seed condition<\/h2>\n

A red pepper may have pale seeds and a green pepper may contain a few dark ones. External colour mainly reflects pigments and maturity, not a direct diagnosis of the seed cavity.<\/p>\n
