External and intramuscular fat behave differently<\/h2>\n
A ham contains subcutaneous fat, external covering fat and fat between muscle fibres. Protected internal fat generally keeps a white or ivory appearance longer. The outer layer is more exposed to oxygen, light and environmental changes.<\/p>\n
This is why a superficial area may yellow before the fat revealed as carving progresses. A yellow outer layer is not the same thing as a deep alteration throughout the piece.<\/strong><\/p>\n Fat changes over time. Contact with oxygen promotes oxidation and can modify colour, aroma and flavour. During a long curing period, exposed surfaces can become more yellow or darker.<\/p>\n This may remain a superficial change. When a ham is started, rind and part of the external fat are removed precisely to reach the appropriate serving area.<\/p>\n Do not remove every visible trace of fat. Clean white or ivory fat on Iberian ham is central to texture and flavour. Stable storage and carving only what you need are better practices.<\/p>\n When beginning a ham, remove rind and enough external fat to prepare the carving area. If yellow colour is limited to the outside and clean pale fat with a normal aroma appears underneath, progressive trimming usually resolves the issue.<\/p>\n Do not strip the entire ham at once. Its covering helps protect the piece; clean only the area that will be carved.<\/p>\n If yellowing is deep, widespread or associated with clearly abnormal smell, flavour, fluid or texture, stop and ask the seller or producer to assess the piece.
