If florets are slimy, wet, soft or foul-smelling<\/strong>, the situation is different. Visible mould, wet blackened tissue or stems that are collapsing are also strong reasons to discard the broccoli.<\/p>\n Ageing broccoli can develop a stronger sulphurous vegetable smell, especially during cooking. That is not the same as a clearly rotten or fermented odour in the raw product.<\/p>\n Press the main stem gently. It should feel firm. A slightly flexible stem may simply have lost some water. A soft, wet and degraded stem indicates more advanced deterioration.<\/p>\n Side stems and leaves also provide clues. Wilted leaves show age; slimy or wetly decaying leaves are a more serious sign.<\/p>\n Not for safety if the issue is only physiological yellowing. You may remove the most open or dried areas for quality. If a section is soft, mouldy or wet, however, it is no longer a simple colour issue.<\/p>\n Trimming a small aged area from an otherwise firm head can make sense. A completely yellow, open and limp broccoli may not be rotten, but its culinary value will be poor.<\/p>\n Storage causes metabolic changes and some sensitive compounds can decline over time. There is no single moment when a slightly yellow broccoli suddenly loses all nutritional value. The useful household principle is simpler: the sooner a perishable vegetable is eaten in good condition, the better its overall quality is preserved<\/strong>.<\/p>\n Broccoli belongs in the refrigerator. Low temperature slows respiration and senescence. Keep it in a stable cold area or vegetable drawer rather than leaving it for days at room temperature.<\/p>\n Protect it from dehydration without trapping free water on the surface. Simply avoid pressing broccoli against very ripe fruit for long storage when there is room to separate them.<\/p>\n If it is still firm and sound, freezing can prevent further ageing before you have time to eat it. Freezing will not restore lost green colour or reverse softened texture.<\/p>\n For the best result, freeze broccoli while it is still fresh and use an appropriate preparation and blanching method.<\/p>\n If it is still sound but looks less attractive, change the recipe. Soup, pur\u00e9e, stir-fry, pasta sauce or an omelette can use good flavour without requiring perfect florets.
